A Noise Within celebrated its much-anticipated debut in the company’s new permanent home in Pasadena on Oct. 29 with a benefit performance and dinner in the 33,000-square-foot venue. Presented by Wells Fargo, the evening drew nearly 300 supporters and raised $121,000 for SoCal’s only year-round classical repertory company, which relocated from Glendale to a state-of-the-art facility in the former Stuart Pharmaceutical building. The opening-night performance of Co-Artistic Director Julia Rodriguez-Elliott’s production of Shakespeare’s Twelfth Night transported Monette Magrath and David Di Cristofaro

His early fascination for drawing certainly did. Duncan jumped right into the animation business fresh out of college, and then, four years ago, he set up his own production company in a brick office building on Arroyo Parkway. After passing through the reception area, one enters a main studio with a row of work stations. To the right is a conference room lined with concept and production sketches from various projects, reflecting a wide range of work from commercials to feature films to apps. One board is covered with illustrations for an educational app that will be introduced next spring: “My Beastly ABCs” is an interactive alphabet chart featuring lively monsters and sprites, like Jackalope, a mythical North American creature. Born in Ottawa, Canada, Duncan grew up loving to draw. “In kindergarten most people are doing stick figures,” he says, “but I was doing a full head, body, torso, legs. A lot of drawing is really observing, your point of view of things. Cartooning is an exaggeration of things you see. I assume most artists are observant; actors are, too, but they use their bodies to convey ideas. For me when I’m drawing, I’m not really thinking — it’s an extension of what’s in my imagination.” On the conference table is a comic book Duncan made in 1972 when he was eight. He and a friend drew their own comic strips on sheets of paper which they later bound together with string and titled Cartoon Hour. As Duncan flips through the worn pages he keeps in his office, he softly reminisces: “It was an offshoot of what I saw on TV at the time” — including the animated series The Flintstones and Spy vs. Spy — as well as British comics. His interest was so intense that he began reading up on the lives of legendary animators such as Charles Schulz of Peanuts fame and Walt Disney. He found a children’s book on the latter. “He seemed to have adventures and do what he wanted,” Duncan says. “This book told about how he was in the war in France and then came home and started this studio. It seemed a magical, Mark Twain kind of life.” That struck Duncan as a very good life to have. Later he was lucky — and talented — enough to get into an arts high school. He went on to attend Sheridan College near Toronto, where he majored in animation and took an early computer graphics 16 | ARROYO | 12.11

course. After graduation, he was hired to assist a former teacher working on Asterix, an animated feature from the French studio Gaumont. What followed were two heady years in Paris. “Living in Paris was absolutely fantastic, walking around and seeing art,” Duncan says. “It created an interest in me in city design — it was designed for people to walk in. That’s actually what’s appealing to me about Pasadena — it’s got a taste of history, it’s got some amazing architecture and it’s a very walkable city.” Duncan enjoyed sojourns in Spain, London and Ireland, places where he also managed to find work as an animator. He returned to the U.S. in 1988, staying briefly with his brother in New York before moving to Los Angeles to work for independent studio owner Don Bluth (An American Tail, Land Before Time). In 1990 he finally arrived at Disney, where he spent 12 years, initially working as a character animator on The Rescuers Down Under, Beauty and the Beast as part of the Belle team and Aladdin, helping to bring the villain Jafar to life. “It seems I either did villains or heroines,” says Duncan. “Sometimes the female characters have the most interesting personalities or story arcs.” Over time he earned more responsibility and supervisory roles designing animation for Captain Amelia in Treasure Planet (2002), Meg in Hercules (1997) and Jane in Tarzan (1999). The latter two won him nominations for Annie Awards, considered the Oscars of the animation world. Duncan grounds his designs for a character’s image and body language in an understanding of its psychology and background. For Jane of Tarzan, he says, “we studied the layers of clothing women would wear in the Victorian era. I animated her kind of cinched up and linear.” She meets Tarzan, who “takes her into the trees and shows her how amazing the jungle really is. By that time she’s taken off her bustle, and her body becomes more relaxed.” Tarzan was the most expensive animated feature Disney had made up until then, with a budget of $150 million. Duncan Studio has worked on Focus Features’ animated sci-fi feature 9 (2009), about a rag doll that wakes up after the apocalypse, and commercials for Disney. It collaborated with Tom Hanks on a short that evolved into a web series still in production. The studio designed the characters and produced the story reel for next year’s feature film Dorothy of Oz, with Lea Michele voicing the title role and Dan Ackroyd as the Scarecrow. It also produced a special feature for the DVD and Blu-ray release of DreamWorks’ Kung Fu Panda 2, coming out Dec. 13: “Secrets of the Masters” focuses on the adventures of three secondary characters — Croc, Storming Ox and Thundering Rhino. Even in the tech-savvy 21st century, it still requires lots of time and people to create animation. The Kung Fu Panda short took 95 people eight months to complete. But smaller and faster computers have helped shrink labor hours and costs, while Hollywood has ramped up animation production with the birth of DreamWorks, Pixar and other “factories.” “When I came to the U.S., there wasn’t a lot of production in animation being done in L.A.,” Duncan says. “Over the last 25 years it’s been exciting to see the amount of work being produced [here]. A lot of it is because of technology — it’s really allowed people to have small companies doing high-quality work.”|||| 12.11 | ARROYO | 19

SHE LILTED AROUND THE HOUSE LIKE AN AERY, MAGICAL WOODLAND CREATURE – WITH A SERIES OF CHRISTMAS COCKTAILS IN ONE HAND – AND EARNED LOTS OF KISSES. RELUCTANT ONES PERHAPS, BUT GENEROUS, IN KEEPING WITH HOLIDAY SENTIMENT. The trick is to let the magic happen. When it comes to home décor, the key is all in the container, according to Jordan Stringfellow. By which she means that a luscious flower arrangement of holiday blooms - say red roses, snow-white amaryllis, chartreuse orchids and Christmas greens - will infuse any room with color and life, they belong everywhere, just give them a proper setting.This theory may apply to an abundance of holiday traditions, from flowers and food, to family, friendship and everything in between. Balance doesn’t mean symmetry, however; it means finding an equilibrium among old and new, formal and casual, personal and commercial elements of design. “That balance is unique to every single home,” says Jordan.“Because I live here I have a sense of what’s unique about the Pasadena area, and when I work with clients I spend a great deal of time with them. I key into the soul of what the client is doing, whether it’s an intimate dinner, a fundraiser, a luncheon for the school board. Every home and every event has its own signature.” What’s your signature? It may be a daunting question, one that eludes a simple answer. So, don’t worry about it. Just look for the things that you love, that speak to you, that resonate with the wondrous spirit of past, present and future. This year my daughter scooped up an armful of autumn leaves from the yard to strew around our harvest table. And we hung an old pencil sketch of her grandparents on the wall, overlooking our feast, so we would feel their presence with us at mealtimes. Now we’re scavenging through several generations’ worth of ornaments, and dusting off the wings of an angel who used to perch on my mother’s grand piano, among a wreath of greens. But the brightly wrapped presents are new, as are the sparkling lights around the kitchen window, and the architectural vases overflowing with holly berries in the powder room. The winter holidays offer us an opportunity to revere all that is old and new. Everything that is current, and part of the current, in our lives. LET THERE BE LIFE… Christmas Trees and other organic décor embody custom and innovation at once. Thousands of years ago the citizens of the Roman Empire decorated with live greens in winter, as did the Hebrews, who were encouraged to gather the wintry fronds and willows that grew along wandering streams, and to arrange them joyfully around their homes. As early as the 15th century London residents and churches decked their halls with ivy, bay, holly and seasonal greens. The Christmas Tree probably originated in Germany in the 18th century, and by the late 19th century American homes glowed with the lights and decorations of the customary Tannenbaum. There’s no need limit trees to the great room or the living room, by the way. Small trees, boughs and garlands can spruce up any area. Jan Harrington, of Jan Harrington Construction, has decorated her own home with an assortment of trees and greens.

“I love working with my designer during the holidays!” says Jan.“She can tweak a ribbon in just the most perfect way, so with her help I have a table top tree on the island in the kitchen, the buffet in the dining room, and a full sized tree in the living room. The top of the china cabinet and mantle are adorned with Christmas tree branches and colored bulbs and finished with ribbons. The bathrooms are dressed in bright colors, tastefully with a candle, plant or adornment for the curtains.” Traditional Christmas trees can be decorated with natural materials. He inhabited that role from 1999 to 2006, won an Emmy Award for best supporting actor and became a household name and familiar face. But Whitford was no seven-year success story. Long before the White House drama ever aired, his profile was rising on both coasts, his time split about equally among roles in theater, film and television. In all three media, he has worked with some of the entertainment world’s top talents. Whitford’s television debut in 1985 in an episode of The Equalizer was quickly followed by his first film role in The Doorman and C.A.T. Squad, a TV movie about anti-terrorism agents directed by William Friedkin. In 1987, he appeared with Kathy Bates in a New York revival of Sam Shepard’s family drama, Curse of the Starving Class. He moved on to the Los Angeles production of that show, after which he was cast as Jack Ford in the TV movie The Betty Ford Story. From then on, Whitford continued to commute between the New York stage and Hollywood. In 1990, he made his Broadway debut in the military court drama A Few Good Men by Aaron Sorkin (who went on to create The West Wing). He also appeared in Presumed Innocent, among a string of prominent films that included Awakenings, The Client, Scent of a Woman and Philadelphia. By the time he joined The West Wing in 1999, Whitford had starred in dozens of Broadway and Off-Broadway shows. He had done comedies, dramas and horror films and made numerous TV appearances on hit series like E.R. and NYPD Blue. Whitford was born in Madison, Wisconsin. He graduated from Wesleyan University and earned a Master’s from Juilliard. In 2009, Whitford and Malcolm in the Middle star Jane Kaczmarek, who have three children, announced they were filing for divorce after 16 years of marriage and joint charity work. Bettijane Levine talked to the peripatetic Whitford about the business of acting and his upcoming stage gig close to home.

Oh, absolutely. The stage is my favorite. It’s the most fun you can have. Because you get to act. When you do a movie, you do it once, out of sequence, in little snippets. When you do a play, you get to tell the whole story eight times a week. It’s a lot of fun. And it’s dangerous. Nothing focuses the mind like an acute awareness of the possibility of public failure.

My kids are 14, 12 and 9 — two girls and a boy. They are the greatest characters I’ve ever created. And here’s my standard advice: Get the best education you can get. Go to a regular college. And if you still want to act, then go to a conservatory. SO YOU’D BE HAPPY IF THEY BECAME THESPIANS?

Having people know who you are more than you know who they are is really creepy. DID THAT BOTHER YOU?

Not at all. I don’t have patience for actors who complain about getting stopped on the street. If you’re an actor, you’ve signed up for that. The people who come up to you are usually saying very nice things to you and about you. The only time it’s really a problem is when kids are involved. My kids are older now, but when kids are little and you’re out there pushing a baby carriage, you want to focus attention on the kids. YOU SAY STAGE WORK IS YOUR FAVORITE. BUT IT WAS A TV ROLE THAT MADE YOU FAMOUS.

Yes, and let’s be honest –– I was very lucky to have a brilliant writer and friend, Aaron Sorkin, who wrote a very complex character. I’m lucky I got to play a guy who’s smart and funny and horny. He was a little emotionally constipated –– it took him seven years to ask Donna out on a date. It was that character who has opened up so many opportunities for me.

Here’s the weird thing — there is no activity I would rather have my child experience than the joy of acting. For me as a kid, it was a revelation that this was the one activity where I didn’t have to turn any part of myself off. In sports, I have to turn off my heart and my mind. When I read a book, I have to turn off my body. In acting I just found something that integrated all of me in a way that is joyous and fun. The act of acting is wonderful. But the business of acting is absolutely disgusting and cruel. CAN YOU EXPLAIN?

There were 22 people in my class at Juilliard who went there for four years. Only three of us make a living by acting. It’s very tough. And by the way, it’s much easier for men than it is for women, although that may be changing a little bit. But a huge majority of scripts have a huge majority of male characters, and then there will be a wife and a babe. There is a vicious, cruel aesthetic that is required of women that is not required of men. YOU HAVE TWO FILMS COMING OUT. ONE’S A HORROR FILM?

Yes, Cabin in the Woods, which I actually like a lot. It’s Joss Whedon, who did Buffy The Vampire Slayer. He’s a very interesting guy.

SO AFTER ALL YOUR THEATRICAL TRAINING, YOUR MASTER’S DEGREE AT JUILLIARD, YOUR WORK ON STAGE AND IN FILMS, IT TOOK A TV SHOW TO OPEN A WIDER PATH FOR YOUR TALENTS. ISN’T THAT A SHIFT FROM THE WAY THINGS USED TO BE?

Yes. It’s so strange. One of the first plays I did in New York, with Kathy Bates, I remember Kathy being worried about doing a TV show because she thought it would hurt her theater career. Now it’s exactly the opposite. Nowadays, the best thing you could do for your career is a television show.

I READ THAT IT’S A TONGUE-IN-CHEEK KIND OF HORROR FLICK.

No, it’s axe-in-cheek. The other film is Decoding Annie Parker. I’m excited about that, too. Samantha Morton is the star. She’s a wonderful English actress. And Helen Hunt is in it. I just last night met [the real-life] Annie Parker at the wrap party. She went through multiple battles with cancer, and she was intuitively convinced there was a genetic component because there was a lot of cancer in her family. She connected with a genetic researcher, played by Helen Hunt, who actually identified the BRCA gene for breast cancer.

CAN YOU EXPLAIN THE SHIFT?

I think it’s a few factors. First, it has to do with the unfortunate economics of the theater, especially in New York. And also, in the old days they weren’t doing so many great TV shows as they are now. Shows like The Sopranos. But I actually think the shift is unfortunate. WHY IS THAT?

It’s unfortunate because the place where people learn to act is on stage. The reason West Wing was such a good cast is they were all theater actors –– Martin Sheen, John Spencer, Alison Janney, Richard Schiff, all of them. You take a talented person and put them on the stage eight times a week for 10 years and don’t let them become a star and you get someone like Alison Janney, who’s talented and really knows what they’re doing.

TALK ABOUT ART. ONE REVIEWER CALLED IT "SHORT, CHIC AND WICKEDLY FUNNY." WOULD YOU AGREE?

I love this play. It’s incredibly funny, very tightly written. And it’s short. I saw it on Broadway. I love the writing. The author, Yasmina Reza, also wrote God of Carnage. In this play, I think she asks some very fundamental questions about life and art. Certainly my character does. A lot of us walk into a museum of modern art and have the sense that maybe we don’t quite get it and that the people that do get it are maybe a little pretentious and living in their own world. It’s shattering to me that this intimate friend of mine can be so swept up in that world. HAVE YOU PERFORMED AT THE PASADENA PLAYHOUSE BEFORE? IT’S AN EASY TRIP FROM YOUR HOME.

ARE YOU SAYING THAT THEATER WORK ISN’T AS RESPECTED NOW AS IT WAS?

What worries me these days is that the young theater actors in New York are not valued the way they used to be. The agents want to get their kids on TV shows as soon as possible. I know actors in New York who have done a lot of really great theater work. If this was the ’80s, they’d have agents crawling all over them, trying to represent them. These days, just doing theater for its own sake is not valued. It was the place where young people learned to act. 46 | ARROYO | 12.11

Christmas is coming, and in case a certain man in a red suit is reading this, I have been a very good girl this year. Okay, I might have raised a certain finger at that jackhole in the Hummer who cut me off while talking on his phone. (Unless he was a brain surgeon delivering lifesaving instructions to a remote surgical unit, I trust you’ll be sending him a lump of coal.) Also, I may have made some disparaging comments about the soccer coach of an opposing team. And the U.S. House of Representatives. (Again, may I suggest coal?) Like most chefs, I view the holiday season as my culinary tour de force. I can cook with reckless abandon, with nary a care in the world (until New Year’s Day, when I resolve to diet after a fisticuffs confrontation with the bathroom scale). But fiddle-de-dee, that day is still a month away, so I shall begin the gastronomic orgy. Soon enough I will succumb to Seasonal Stress Disorder, and you'll find me on the floor in the fetal position, suffering a simultaneous sugar/credit card coma. I'd better get baking while it still sounds fun. There are so many great holiday baking traditions to choose from, but I'd rather not. Why must I decide between a croquembouche, that golden tower of cream puffs held together with caramel glue, and a Dickensian figgy pudding, its amalgam of dried fruits, nuts and brandy set aflame in a Yuletide pyrotechnic extravaganza? It's the Sophie’s choice of pastry chefs. I’m just going to make it all. Gingerbread will appear in many forms too, as will fruity breads like the German Stollen or the Swedish St. Lucia. Bûche de Noël This recipe is an undertaking, but well worth the effort.

CHOCOLATE GANACHE INGREDIENTS Ingredients 12 ounces bittersweet chocolate (chips or chunks cut into small, uniform pieces) 1½ cup heavy cream

METHOD Place chocolate pieces in a bowl and set aside. Bring cream to a boil over high heat, then pour it over the chocolate. Give the bowl a shake so all the chocolate is submerged, then set it aside at room temperature to soften for a least 5 minutes. After 5 minutes, use a whisk to stir the chocolate and cream together until well blended. Cover at room temperature overnight.

MERINGUE MUSHROOMS INGREDIENTS Ingredients 4 egg whites 2 to 3 drops of lemon juice 1 cup granulated sugar ¼ cup bittersweet chocolate chips or chunks, melted 2 to 3 tablespoons cocoa powder

METHOD 1. Using an electric mixer, whip the egg whites and lemon juice into a soft foam. Continue whipping at high speed and slowly add the sugar, about 1 tablespoon at a time, taking 2 to 3 minutes to add it all. Whip until the peaks are stiff. 2. Coat a baking sheet lightly with pan spray, and preheat the oven to 250°. Transfer the meringue into a pastry bag fitted with a large plain tip. The mushroom caps and stems are piped separately. For the stem, slowly pipe a very tall Hershey’s Kiss shape. For the caps, pipe a squat kiss shape, or a rounded blob. Try not to give it a pointy peak. Let the meringues dry at room temperature for 15 minutes before baking. Place the tray in the oven for 5 minutes. The meringues should puff slightly. Turn the heat down to 175°, open the oven door a crack and bake until dry to the touch, about 4 hours (or longer, depending on your oven). 3. Cool mushrooms completely. Using a paring knife, make a small hole in the center of the mushroom cap’s underside. This is where the stem will attach. Dip the stem in the melted chocolate, insert it into the knife hole and set your mushroom aside. Repeat until you have a mushroom forest. Finish with a dusting of sifted cocoa powder.

CAKE INGREDIENTS 1 cup cake flour ¼ cup cocoa powder 1 teaspoon baking soda ¼ teaspoon kosher salt 2 eggs ¾ cups sugar, divided ¼ cup canola oil 1 cup buttermilk ½ cup strong coffee

METHOD Preheat oven to 350˚. Coat a baking sheet with pan spray, line it with parchment paper and coat the paper with pan spray. Sift together flour, cocoa powder, baking soda and salt, and set aside. In a large bowl whip together eggs and all but one tablespoon of sugar until fluffy and pale yellow, about 5 minutes. Combine oil, buttermilk and coffee, and add to eggs, alternating with dry ingredients. Transfer to prepared pan, spread out evenly and bake until set but springy to the touch, about 10 minutes. Sprinkle the top of the cake with the extra tablespoon of sugar, then cool completely. (This extra sugar will help with the rolling later.)

MOCHA BUTTERCREAM INGREDIENTS 7 egg whites 1¾ cup granulated sugar 1 tablespoon corn syrup ¼ to ½ cup water 20 ounces unsalted butter, softened, cut into 1-inch chunks 1 tablespoon instant espresso powder 8 ounces bittersweet chocolate, melted and cooled (but still liquid)

METHOD 1. In a large bowl whip egg whites until they reach soft peaks, and set aside at room temperature. 2. In a large saucepan combine sugar, corn syrup and water. Stir to moisten, then wash any sugar residue off the sides of the pan. Set it over high heat and bring it to a boil. Cook without further stirring, until it reaches 240˚ (soft ball stage). 3. Immediately begin whipping the whites again, and slowly drizzle in the hot sugar syrup. When all the syrup is added, continue whipping until the mixture is stiff and cool. (This may take a while, but do not cheat it. If it’s at all warm it will melt the butter in the next step. You can speed the cooling with an ice pack around the bowl if necessary.) 4. Still whipping, add the butter chunks one at a time. Keep whipping until the mixture begins to come together in a smooth, fluffy mass. It should pull off the side of the bowl slightly when this happens. Now add the espresso and chocolate and blend completely. Cover and store at room temperature until you’re ready to decorate.

ASSEMBLY 1. Lay a sheet or two of plastic wrap onto the counter so that it covers 2 inches beyond the baking pan. Invert cake into the center, and remove the parchment paper from the cake bottom. Spread ganache over the cake in a smooth even layer, no thicker than one-quarter inch. Working from the long edge, roll the cake into a log, using the plastic to help. Tighten the ends of plastic wrap to force the cake into a sausage shape, and chill for at least 1 hour. 2. Unwrap chilled cake. Using a serrated knife, cut off about 2 inches at each end on a diagonal. Position the large piece onto your serving platter, and attach the cut end pieces to look like the stumps of branches. 3. Ice the log with buttercream. Use a thick coat, and sculpt the stumps into shape. Leave the ends un-iced so the spiral shows (like tree rings). You may comb over the icing with a fork or pastry comb to create “bark.” 4. Dust with sifted powdered sugar snow, and decorate with meringue mushrooms. Save extra mushrooms to serve with each slice. 48 | ARROYO | 12.11


–continued from page 47 But the best Christmas dessert of all, and the one I most enjoy making, is Bȗche de Noël, otherwise known as the Yule log. Yes, it's a cake shaped like a log, and who else but the French would think of that? It's the only log you can serve to rave reviews (unless you are cooking for Mr. and Mrs. Beaver). If you are native to Southern California, you may be confused. A log is something people in colder environs burn in their fireplaces to stay warm. (A fireplace is that hole in the wall with the little shelf on top where you arrange your decorative candles.) Yule logs sprang from the Celtic pagan tradition of bonfires at winter solstice meant to call forth the sun. The tradition eventually found its way indoors, where large logs burnt throughout the longest night of the year to keep evil spirits at bay. During the Middle Ages they got crafty, decorating Yule logs with ribbons and winter greenery. But how that log became a beloved French pastry is a bit of a mystery. In an explosion of apocryphantasy, the French have spun a yarn about Napoleon and the log in question. In a sudden fit of concern for the well-being of his people, he declared that all chimney flues should be closed to prevent drafts and illness. Pastry chefs seized the moment and created pastry logs around which the French family could gather, presumably in rooms filled with smoke. This story has more

but they are mostly sweet and usually have a head. Mickey Mouse pancakes are all head, as are calaveras de azúcar, the impressively decorated Mexican sugar skulls. Gingerbread men taunt you with their delicious heads, too. Gummy bears have teeny Bavarian heads, and Swedish fish have tiny delicious fish heads. There are some savory examples too, such as the coulibiac, a filet of salmon encased in a fish-shaped pastry. Some butcher shops display their raw ground meats sculpted into animal shapes, which strikes me as a particularly macabre style of merchandising. Speaking of sculpture, let’s not forget the famous lifesize butter cow of Iowa State Fair fame. If there’s not a kosher law prohibiting that, there should be. There is even a sculptural movement afoot in the world of the bento box (Japanese lunch boxes), in which rice balls and the like are sculpted into the shape of cartoon characters, in case you get a hankerin’ for a Power Ranger. Maybe it’s a superpower transfer thing, like the belief of Texas’ Karankawa tribe that by ingesting their enemies they’d absorb their power. (Although… this seems odd. Doesn’t being captive mean you are now the one without the power?) As you can see, if you think about it too much, representational food starts to get weird. For the most part, I prefer my food to be shaped like itself. But when I crave a little edible art, I’ll always turn to the French. Like Rumplestilskin, they spun a humble log into culinary gold, and for that, I say, merci. I'm just thankful they didn’t decide to make a cake shaped like other hardships they've endured. Recipe from Rob Rice of King’s Row Gastropub, Old Pasadena INGREDIENTS 4 fresh duck legs, skin on 2 cups grade B maple syrup 2 tablespoons fresh orange zest 2 tablespoons brown sugar 2 tablespoons chopped shallot or white onion 3 cups dry English cider 3 cups chicken stock/broth (local convenience store variety is fine)

METHOD 1. Combine syrup, orange zest, sugar and shallot/onion, and add legs. Marinate overnight or for at least 6 hours. Remove legs and pat dry. Simmer in very little distilled water on low heat in a sauté pan until legs are browned. 2. Combine marinade liquid, chicken stock and cider in large sauce pot. Add legs and bring to boil; reduce to simmer for roughly 2 hours or until the meat is falling off the bone. Add more liquid as necessary. 3. Transfer to oven pre-heated at 275° and bake until crispy. Baste with liquid again. Remove meat from bone, and pile onto toast points with a touch of cranberry sauce and a smear of goat cheese.

METHOD Combine all ingredients with water (to cover) and slowly boil until all liquid is reduced. Remove stick and cloves before serving.

Notes of apricot and orange rind are balanced with minerality and crispness. Penner Ash Riesling 2009, Willamette Valley, Oregon, $20.99 Aromas of kiwi and honeysuckle lead into a dry, tangy finish with a tad of the tannic, making this a great white wine for richer foods. As an aperitif, it’s wonderful with an array of cheeses or first courses.

Chunky Crab Mousse in Cucumber Cups with Pickled Chili Recipe from Onil Chibas of Elements Kitchen, Pasadena INGREDIENTS 3 English cucumbers, peeled 1½ cup high-quality crab meat, lightly chopped ¼ cup heavy cream ¼ cup crème fraîche 3 to 4 tablespoons shallots, finely chopped 1 tablespoon chives, finely chopped 1 to 2 tablespoons grated (on Microplane zester) fresh ginger 1 tablespoon lemon zest ¼ to ½ teaspoon Sriracha (or any hot sauce) 2 Fresno chilis, thinly sliced ½ cup rice wine vinegar Salt and pepper to taste

METHOD 1. Evenly slice cucumbers into 1-inch slices. Using a small melon baller, remove enough of center to form a cup. Set aside. Place thinly sliced chilis into a nonreactive bowl and cover with rice wine vinegar. Set aside. 2. Mix together heavy cream, crème fraîche, shallots, chives, ginger, lemon zest, hot sauce, salt and pepper. Beat mixture to form soft peaks. 3. Fold in crab.Taste and adjust seasoning as needed.

Green and Red Tip Top Vineyard Zinfandel 2006, Napa Valley, $21.99 This is a very high elevation vineyard, and the result is a zin with complexity, softness and surprising lightness. Zins get a bad rap as grapey and overripe, but a zin like this is a revelation. It’s great with holiday foods from turkey to other meats as its juiciness and earthy qualities come to the fore, depending on the dish. Bielsa Garnacha 2009, Campo de Borja, Spain, $11.99 Located at the southeastern boundary of Rioja, Campo de Borja has been known in recent years to produce some high-quality, low-priced marvels from Tempranillo and Garnacha grapes. Garnacha (or Grenache) is a classic mate for a wide variety of foods because it has an abundance of bright, juicy fruit and a relatively low level of tannin for a red wine –– it’s luscious, full-bodied and aromatic.

Bubbles Renardat Cerdon du Bugey, Savoie, France, $22.99 The small French town of Cerdon rests just a stone’s throw from the Swiss border in a little-known wine appellation called Bugey. Renardat’s Cerdon de Bugey is effervescent, smelling of fresh, not-too-ripe peaches and ruby grapefruit, with delightful berry flavors. It’s a perfect way to start a meal; we had it last with prosciutto and melon. Vida Organica Sparkling Chardonnay, Mendoza, Argentina, $11.99 We’re always on the lookout for affordable bubbly; it goes with everything.This organic all-Chardonnay selection has such lovely fine bubbles and such a nice dry, yeasty nose, you could almost be fooled into thinking you’re drinking a much, much more expensive wine.

The Cocktail to Make This Holiday When I was a child, my parents were constantly having cocktail parties. The ladies would arrive in their long evening dresses, and the men all wore suits and ties. I was allowed to watch from the stairs as they were met on arrival with hors d’oeuvres --- which I’d helped my mother prepare --- and a glass of something mysterious. If you’d like to conjure up a little holiday magic of your own this year, the team at 1886, the little gem of a cocktail bar at The Raymond restaurant in South Pasadena, can help you get your game on.

METHOD 1. Whisk together egg yolks, sugar and ice cream stabilizer. 2. Heat cream, milk, molasses, spices and salt and bring to scaldingpoint boil.Temper the liquid into the egg-sugar mixture. 3. Return combination to pot and cook on low heat (180°), stirring constantly so it does not burn. 4. Strain into bowl. Chill immediately by pouring into container and placing container into large ice bath (a big bowl with ice and water). After cooling, refrigerate overnight. 5. Pour into an ice cream–maker a quart at a time and freeze.
