from the Publisher ‘Tis the season! It’s time to enjoy this wonderful Arizona weather and hit the wines trails to visit wineries, vineyards and tasting rooms. They each have their own unique character, and with the vines starting spring into action, now is the time to sit outside on their patios and sip some Arizona wine among the vines. A special, thanks to Burning Tree Cellars for hosting AZWINE for our cover photo shoot. Their outdoor patio was the perfect location for taking our cover picture. Their hospitality during the photo session exemplifies that they treat everyone like family and friends. We had a great time with our friends that modeled for the photo, and even made some new friends, the Osterday family from the valley, who happily sat with us on the patio for the picture. Please make sure you read “A Conversation with Kief Manning.” Kief and his family are passionate about wine, friends, family, and food. he Arizona Vignerons Alliance was recently created by a group of prominent Arizona winemakers. Their Mission is to ensure quality and authenticity in Arizona wine; to improve grape growing and winemaking across all wine regions of the state; and to help promote Arizona wines so they are recognized, respected

and sought-after in Arizona, the U.S., and globally. Arizona wines are some of the most wonderful wines produced in the United States. The alliance wants the world to know about them. They will initiate and join regional, national and international events to showcase the broad variety and finest quality of Arizona’s wines. Members of the alliance state that by collecting and sharing data on a variety of measures such as soil composition, acre yield,

Arizona Vignerons Alliance welcomes and supports future growers and winemakers in Arizona. They will provide access to education and hands-on experience to invest in the future of the Arizona wine industry. Alliance members are committed to a transparent review of wine quality by independent, well-recognized wine professionals of any 100% grown and produced Arizona wine. Only wines blind tasted and approved by the independent panel will be able to license the AVA emblem for their label. Their goal is to make sure every consumer of Arizona wine feels confident that when they

Chateau Tumbleweed

Chateau Tumbleweed is a collaboration of four friends – two husband-and-wife teams – who, after working more than 30 combined years for other Arizona wineries, recently left their “day jobs” to focus on their own project. They have a great friendship, a penchant for absurdity and complementary skills in vineyard management, winemaking, sales and administration. The group crafted their first wine – only three barrels – in 2011. After three vintages of making their wine at the FourEight WineWorks Winemaker’s Cooperative in Camp Verde from 2012-2014, they took the plunge, purchased the building they had been eying for a year, and converted it into one of Clarkdale’s first commercial Visit our winery and tasting room in the Verde Valley! wineries and tasting 1151 West State Route 89A, Clarkdale, Arizona rooms. We’re grateful to be part of this evolving industry and finally be free to do this our way.” I was curious about the tumbleweed characters used in their

advertisements, so I asked Kris how they came about. “Making content for new print ads is another way to make fresh images in our Tumbleweed family that will not necessarily live on wine bottles. It is a great way for us to dialog with our customers and to show them that, although we take our wine making very seriously, we don’t take ourselves seriously,” Kris reiterated. “Changing the ad every few months allows us to create images that are current to that which is happening around us. The wines are always changing as they live in the bottle and our images are on that same path.” I understand what Kris is saying. These ads make readers pause, and really take a look. AZWINE has been overwhelmed with response from readers who can’t wait to see what Tumbleweed characters are going to pop up in future Chateau Tumbleweed ads. Kris went on to say, “After working at various wineries, we know how lucky we are to have an in-house art department. The four of us have a great symbiosis of friendship, business partners and our mutual love of the creative process in all realms is the yarn that knits us tight. Plus, we really love to laugh, and tumbleweed-headed people look really funny.”

canopy on the windswept high desert prairie of Sonoita. To find the Tasting Canopy, look between mile markers 39 and 40 on the south side of HWY 82, at the crest of the hill, and search for the Airstream trailer gleaming in the sun, aforementioned heraldic banners dancing in the wind. It is well worth the short walk from the road to attend to the wines under the canopy, which are a splendid taste of Willcox’s high desert terroir. By the time this article is published, Callahan will have his winery completed and a new tasting room set up that will be perhaps less dramatic in scope, but indoors – very good for the brisk spring winds that roar through Sonoita bringing their cargo of frost. Plans are also underway to begin planting in the next few years, along with a host of innovative wine-making features that will make Rune a winery like no other. You can also find the wines that Callahan made for Sam Pillsbury at Pillsbury locations in Willcox and in Cottonwood.

currently doing is using native yeasts to ferment some of his white wines, and some of his co-ferments, alongside the commercial yeast strains used by other wineries. As he says, “both are paints in a palate; both add certain things to a wine. Native yeasts are like using a color that hasn’t been seen before. They have their own life and personality and unique character. When you blend them with your other yeasts, you create a unique complexity; a wine that is unique like nothing else in the world, and shows the vintage to its fullest.” The use of the native yeasts which are naturally on the grapes also adds to a unique flavor and expression of terroir of the Willcox Bench. On the fermentation process, the intrepid winemaker indicates that, “things go slower, much more in pace with nature.” The idea for using native yeasts for some fermentation started off in 2012 as one of those Eureka moments that only happen by serendipity: some of the grapes came into the winery from the vineyard warm, and had started fermenting on their own. Callahan decided to see what would happen with the ferment, rather than try and force a new innoculation. When the results were exemplary and supremely unique, he knew he was onto a big idea. Both the 2013 Wild Syrah and the 2013 Rune Viognier, which took best varietal in those categories in the 2015 Arizona Republic Wine Competition, were made with wild yeasts. Not only is Callahan a wine geek, but he is a history geek as well. The name for his personal label, Rune, comes from a style of ancient writing known as Elder Futhark (associated with ancient Germanic languages), and many of the labels show a historical influence. The best example of this is the dichotomy between the Classic and Wild Syrahs: the first label has Roman farmers bringing grapes to their tenant landlord, while in the latter a tattooed Gallic warrior defends his vineyard from an invading Roman army. The reason? “It was the Gauls who first invented the idea of putting wine in oak barrels. I wanted to make an homage to that.” Callahan plans to make each label tell a story, and some threads intertwine on different bottles. After all, Callahan believes that every grape, every wine, and every bottle tells a story, and feels it’s important, even necessary, for their stories to be told: of sun and rain, yeast and sky. At the time of writing, there is no tasting room for Rune; instead, with weather permitting, tastings are held under a

ZWINE Lifestyle sat down with Kief Manning, owner and winemaker at Kief-Joshua Vineyards, for a conversation about grapevines, winemaking, and life. Picture this . . . sitting outside on the patio at Kief-Joshua’s tasting room . . . the sun setting over one of the most beautiful and spectacular regions of southern Arizona, with Kief’s antique car soaking up what sun is left for the day . . . looking out over the high desert grasslands with rolling hills, Arizona ash and oak trees, and endless grapevines . . . surrounded by 9,000-foot mountains . . . and a glass of wine with the winemaker himself. You see, it’s entirely possible that this conversation in this setting might not have happened. We’ll get back to this in a bit. First, let’s find out more about Kief and Kief-Joshua Vineyards. AZWINE: Kief, how did you get started in this business? KJV: I worked in wine shop at 15, then started studying beer and wine at home as a hobby. I attended two semesters at UC Davis in California, and then was too young to continue making beer and wine in US, so I transferred to Monash University in Australia, where I earned my undergraduate degree in Wine Technology Management and Marketing, then continued on and achieved my masterâ&#x20AC;&#x2122;s degree in Viticulture and Enology at the University of Melbourne, Australia. AZWINE: How did you pick the location for Kief-Joshua Vineyards? KJV: When we started in 2003, there was one winery in Willcox, three in the Sonoita-Elgin area, and only five licensed wineries in the state. Sonoita was the only AVA (American Viticultural Area) in Arizona, and still is to this day. My family had always been in Arizona, so I wanted to stay. The Arizona wine industry was young, and this area was extremely pretty,

and very quiet. We found this property through another person, but it was not for sale. It was owned by a person on east coast. We contacted her, she listed the property for sale, and we bought it. There were only two other vineyards on the road at the time. AZWINE: How did you know you could grow grapes on this property? KJV: This area was the second location in the country to be planted with European wine grapes back in the 1560â&#x20AC;&#x2122;s, so we knew the land was right for growing grapes. Plus, we were able to taste some of the wines being made in that area, and we were able to see how their grapevines were maturing. AZWINE: How did you decide how much land to plant first? KJV: We planted approximately three acres the first year, based off of working capital and number of workers. Then, we kept planting each year. We knew if we planted

about two acres every spring, my dad, Jeff, and I could keep up with maintenance and man power without getting too overwhelmed. The first two years of a vine are more labor intensive because we have to structure and train the vine. AZWINE: What is the average life of a vine? KJV: The oldest vine I know of is about 430 years old, but the average commercial life of a grapevine is 75 years in a vineyard. As the vines get older, replanting occurs between these older vines, so young vines can be somewhat mature when old vines are pulled out. AZWINE: Did you start with your own equipment for making wine? Yes, we started with our own equipment and always have done our own winemaking. We started small, with a few necessary pieces of equipment, and continued to add more each year, as needed.

AZWINE: What is the benefit of owning your own equipment? KJV: We have control from grape to glass! We are able to control our own schedule, based on availability and timing of the grape harvest. And, we can do what we want when we need to, in order to best fit our schedules.

AZWINE: How do you decide what barrels to use? KJV: Itâ&#x20AC;&#x2122;s really personal preference, and track record from my experiences making wine. All of our reds are done in oak. Usually we work with more neutral barrels. Not overt oak, just background. We use medium toast to medium-plus toast. Our whites were primarily in oak barrels, but now we are using more stainless steel for whites. It gives them a lighter and fruiter taste for Arizona summers.

AZWINE: How do you decide what to use for bottles and corks? We use 100 percent, all-natural cork for sealing our bottles. When we first started, we used several different bottles, but we soon found that one bottle was sufficient. Now we use just Antique Green Full Punt Bordeaux wine bottles. In the early days of winemaking, bottle make-up and shape seemed to be more regional and traditional to the area where the wine was produced in order to keep costs down. AZWINE: How many wines do you produce each season? KJV: We make about 16 to 17 different types of wine annually, mainly 100 percent varietal. Typically we produce approximately 60 percent reds and 40 percent whites. I also make a late harvest zinfandel. This is special because we let the grapes hang on the vines longer so they concentrate more sugar and ripeness. Personally, I like to drink whites when the sun is up and reds when the sun is down, depending on what food is being served, what the weather is like, and what is open at the time. AZWINE: As a winemaker, at the end of the day, do you pair food with wine or wine with food? KJV: Generally the wine comes to the food, but it can depend on the season and what wines are available. My opinion is that with families at home, wine seems to come to the food, and with the public, food comes to the wine. AZWINE: What can you tell me about the operation of Kief-Joshua Vineyards? KJV: My dad, Jeff, and I do the day-to-day winery and vineyard work, my mom, Charlene, works the tasting

room, festivals, and performs other administrative duties, and we have a couple neighbors that come by to help out. AZWINE: Your tasting room, outdoor patio area, and winemaking facilities all seem to be very peoplefriendly. When is the best time for people to stop if for a tasting, buy your wines, and get a tour? KJV: We are open 11 am to 5 pm, 7 days a week, except Thanksgiving and Christmas. People can stop in for tastings or to buy wine every day, and sometimes we have food trucks during the weekends. We have festivals and events throughout the year, and live music every Saturday in the summer. Being open 363 days a year give us lots of seasonal flexibility on our covered patios, and in the large outdoor area with picnic tables near the vines. I give tours of our facility by appointment. AZWINE: What can you tell me about future plans for you and KiefJoshua Vineyards? KJV: We have planted all of our

AZWINE: Why did you start the Southeast Arizona Wine Growers Festival and how long has it been going on? KJV: Our vineyard has been hosting the festival for five years. As I attended other festivals throughout the state, I realized there was not a festival in our area that brought together wineries from all over the state. We get a couple thousand people for the festival. They all love wine, live music, food, art, and an easy-going atmosphere.

acreage in Elgin. It would be nice to expand production and storage areas, but that will come with time. Meanwhile, we own 40 acres near Willcox in the Kansas Settlement and that is our current project. We will start planting this spring and will plant three to five acres for starters. We are going to build a production facility, storage area, and tasting room that should be open in the next nine to twelve months. Our Kansas Settlement vineyard is near other wineries in that area, so we will be easy to find.

Then in October, he was in a T-bone car accident as a passenger, and again in November, he was in a head-on collision when another driver crossed over the center line into his lane at 60 miles-per-hour, totaling his truck. Kief survived both of these accidents and felt he was on the road to recovery. But during a computerized tomography (CT) scan to check his neck and back from the barrel accident, the doctors discovered he had lung cancer. They found a large tumor in Kief’s lower right lung, which

AZWINE: Lastly, how about those signature mutton chops? What’s the story? KJV: I started shaving when I was 12 and I always hated shaving. When I graduated high school, I had a 9” goatee that went down to the middle of my chest. When I got into the wine business, I started growing the mutton chops because it cut down about 50% of my shaving time.

There you have it. Now you know more about Kief and his vineyard. But let’s get back to the fact that this conversation might not have happened. Kief had a string of unfortunate events at the end of 2015. Although, in a strange way, one accident may have saved his life. During the first week of harvest, a full wine barrel fell off the storage rack onto his head, fracturing a vertebra in his neck. This was not good timing with harvest season just spring

required the removal of a large piece of that lung. He is now free of cancer. So, you see, as luck would have it, if the barrel had not fallen on his head, Kief may not have dicovered he had lung cancer. And now, here we sit together on the patio at Kief-Joshua Vinyards, in the warmth of the late afternoon sun, talking about his vineyard, winemaking, and life. Lucky to be alive, Kief wants to have many more conversations.

of producing memorable wines of outstanding quality, he needed to start in the vineyards and not focus solely on the winemaking. Inspired to meet present goals while preserving the land for future generations, Kief made the commitment to implement sustainable farming techniques from vineyard to bottle. The vineyard is free of herbicides and pesticides, and this environmentally sound approach will continue to be implemented over the years. Baby Doll sheep, an ancient breed measuring only two feet tall at maturity, have been integrated into the vineyard rows to graze on the green grass and weeds, enhancing both biodiversity and nutrient recycling. This practice will decrease the use of harsh pesticides to eradicate weeds and grasses, as well as cutting down on emissions to the air. The Audubon Society has placed several bird houses around the vineyard in hopes of repopulating a rare Bluebird found in Mexico. These birds are known to eat the “bad” bugs, and studies have shown they do not eat the grapes. Kief-Joshua Vineyard ensures natural crop nutrition by recycling organic matter, such as discarded and collected grape stems, for use as mulch in the vineyards, and the use of naturally occurring cover crops. These practices have many benefits. The use of mulch in the vineyard and planting of cover crops adds back desirable, rich, moist and long-lasting nutrients to the soil, and helps prevent soil erosion. The integration of desirable plants throughout the vineyards attracts advantageous insects, which helps to naturally resist pest and disease attacks from undesirable species. In lieu of discarding the wine barrels, Kief and his father, Jeff, are turning the old barrels into high-top barrel tables, end-tables, candle holders, bottles racks, clocks, chandeliers, and baskets. All are reasonably priced and for sale in the tasting room.

Kief-Joshua Vineyards is a small family business with 20 acres in beautiful Elgin and 40 acres in Willcox Wine Country. The Elgin tasting room is open daily and is situated in the middle of what is known as “Winery Row.” Kief practices traditional winemaking methods of minimal interference, open fermentation and barrel aging. In 2006, Kief eliminated the use of herbicides and pesticides in the vineyard. “We strive for excellence in winemaking and sustainability in our vineyard,” says Kief. “I produce Arizona wines that demonstrate the intensity, richness and complexity of the area.” Kief-Joshua Vineyards is a winery defined by family, passion and enthusiasm. At Kief-Joshua Vineyards they specialize in dry, full-bodied wines, that are crafted by hand using traditional methods of barrel aging and gentle handling to produce top-quality wines for any occasion Their Vineyard practices are customized to match the particular characteristics of the soil to help the vines produce the best fruit possible, and to in turn, achieve the best wine possible. At the directon of Kief Manning, his team implements irrigation and nutrient regimes, trellis system and canopy management, rootstock and clone combinations, and pruning and cane selection for each block within the vineyard. Because of the land’s diverse geological makeup, even within one vineyard parcel there may be several different types of soil with different degrees of nutrients for vines and water-holding capacity. In addition, Kief practices sustainable farming techniques, such as composting, planting cover crops and other plant species to avoid soil erosion, adding desirable nutrients back into the soil to attract desirable insects, and integrating animals to naturally enhance biodiversity and nutrient recycling. Kief-Joshua Vineyards is practicing sustainable farming techniques to help protect the land. Kief realized early on that to achieve his goal

Lightning Ridge Cellars

Rancho Rossa Vineyards is one of the largest familyowned wineries in the Sonoita area. They specialize in Ultra-Premium varietal bottlings from their 22 acres of estate plantings, using only 100 percent estate-grown fruit in their wines, the only winery in the area to do so. Sonoita Vineyards

Dr. Gordon Dutt, owner and founder of Sonoita Vineyards, is a retired soil scientist from the University of Arizona. As part of a research project back in 1973, he established an experimental vineyard on the red, acidic clay of the Babacomari Ranch in southern Arizona. The success of that vineyard and the quality of the wines from those grapes led to the planting of a commercial vineyard in 1979, the first in the Sonoita/Elgin area. Sonoita Vineyards’ winery opened in 1983 with a first-vintage production of 300 gallons. Today, Dr. Dutt’s granddaughter Lori is following in his footsteps and serves as the winemaker. The Willcox wine region boasts many of

grew up in Walla Walla, Washington, and spent part of his youth tending local vineyards. Marc Moeller, the company Vice-President, Co-Founder, and Wine Maker #1, spent several years flying Air Force Two and developed an appreciation for old-world winemaking while visiting family in Germany and Switzerland. Winemaker #2 and Distiller, Rolf Sasse, grew up in the hospitality industry, as his parents owned both a restaurant and a bar. Rolf is also an avid home brewer of 20 years. The company is based in southern Arizona with an estate vineyard, winery, and wine tasting room on ‘winery row’ along Elgin Road in the Sonoita AVA. Flying Leap’s largest vineyards are in the Kansas Settlement/Willcox region commonly referred to as the Willcox Bench. This area is comprised of a dense cluster of vineyards with a proven track record for producing excellent quality wine grapes and is within the boundaries of the proposed Willcox AVA. LOOK BEFORE YOU LEAP There is no question that the Flying Leap team is passionate about producing delicious, world-class wines, but it would be fair to say that they place planning and business goals on the same high level. Moeller and Beres developed their business after extensive research and planning. They asked questions of local winemakers and conducted thorough preliminary studies before embarking on their venture. After FLV was a reality they continued in this course of discovery and further ensured quality through formal education, apprenticeship and consulting with other

t is spring 2016 and Flying Leap Vineyards is taking a huge leap forward. An impressive distillery and events venue is under construction next to their estate vineyard and winery in Elgin, while a major vineyard expansion is happening to the east at their Willcox Bench location. Add to this the fact that they’re preparing to open a tasting room in Sedona and it is evident that these are exciting times for this relatively young Arizona wine company. This sort of dynamic growth spurt in the moment, coupled with thoughtful planning for the future, is typical of this team. Considering that Flying Leap came into existence in 2010 and already encompasses five wine tasting rooms, an estate winery, two vineyard complexes, a subsidiary BBQ company, and all of the current projects in the works, it is certainly among the most agile and exciting wine companies Arizona has ever seen. What accounts for this military precision, discipline, and commitment to quality? To understand Flying Leap as an organization, let’s meet some of the primary personalities involved in its direction and growth. The name ‘Flying Leap Vineyards’ references the fact that co-founders Marc Moeller and Mark Beres are pilots who met in parachuting school when they were Air Force Academy freshmen. Early on in the venture they were joined by another longtime friend, Tom Kitchens, formerly of the U.S. Air Force, and then later by Rolf Sasse, formerly of the German Air Force. President, Co-Founder, and Viticulturist, Mark Beres, is also an engineer and experimental aircraft test pilot who

winemakers including their Sonoita neighbor Kent Callaghan of Callaghan Vineyards and former owner/winemaker at Canelo Hills Vineyard, Tim Mueller. JUMP-STARTING A WINERY A winery needs wine, so while they were planting their original Willcox vineyards in 2011 and 2012, they were also making wines with fruit imported from California. As of the 2013 vintage, all FLV wines are made with 100% Arizonagrown grapes. Flying Leap has developed and installed their own proprietary systems for delivering nutrients, fertilizers and acids to the soil through their irrigation network. The vineyards are maintained and harvested by hand. Currently, all of the Willcox-grown fruit is processed at the Elgin winery. TASTING ROOM KICKOFF In February 2013, Flying Leap Vineyards acquired Canelo Hills winery and vineyard in Elgin, along with its inventory, which included many well-crafted Arizona wines. Purchasing this ‘turnkey’ winery gave Flying Leap a new home base for further and faster expansion. Just two days after closing on the Canelo Hills property, Flying Leap began offering their wines and the Canelo Hills wines in that location. Other wine tasting rooms quickly followed, including downtown Willcox in the historic Headquarters Saloon building, Main Street in Old Bisbee, St. Philip’s Plaza in Tucson, and a charming territorial-style property in Tubac. Each location is welcoming and interesting in its own way and features a slightly different lineup of FLV wines on the tasting bar. Flying Leap also collaborates with local small businesses to enhance the experience and offerings at their tasting rooms. One example is their Willcox-area neighbor, Udderly Natural Products, which makes hand-crafted goat milk soaps infused with FLV wine. Original artwork by local southern

Arizona artists is featured in several locations as part of a collaborative arrangement between my own business, TRUST Art & Design, and Flying Leap. And they loved Sahuaritabased Arizona Rub so much they bought the company! This line of BBQ rubs, seasonings, and sauces is available in all of their tasting rooms. THE NEXT HURDLE As mentioned at the outset, Flying Leap Vineyards is building a state-of-the-art distillery in Elgin complete with a 650-liter pot still capable of distilling spirits up to 160 proof, which translates to 80% alcohol by volume, for brandy & whiskey and a large column still capable of distilling spirits up to 190 proof, or 95% alcohol by volume. To provide grapes for brandy, they are currently prepping their newest Willcox vineyard property. This involves drilling a well, removing deeply rooted scrub mesquite trees, building irrigation systems, installing trellises, drilling holes to accommodate the planting of several thousand vines, and building a small lake which will collect monsoon runoff to supplement vineyard irrigation. Freitas Vineyard is hidden away on the outskirts of Cottonwood. A small vineyard, it’s the dream of Ray Freitas. Chateau Tumbleweed is a collaboration of four friends – two husband-and-wife teams – who, after working more than 30 combined years for other Arizona wineries, recently left their “day jobs” to focus on their own project. According to John Mills, Jack and Helen never really lived at the ranch; they used the property as a vacation retreat, often entertaining Howard Hughes, Hollywood movie moguls, Washington D.C. politicians, and U.S. Defense Department bigwigs at the main ranch house. Helen Frye also told John Mills that during a few of the gatherings at the ranch house, Jack Frye, Howard Hughes, and other influential individuals worked on strategies for the country’s involvement in World War II and top secret aircraft designs, such as the “Constellation”. During World War II, the Fryes lived mainly in Falls Church, Virginia and entertained on behalf of TWA in Washington, D. C. However, Helen would “escape” to Sedona at every opportunity, with or without Jack.

As with most boutique wineries, it all begins with a passion and a dream. Without exception, Dancing Dragonfly Winery in St. Croix Falls, Wisconsin, started the same way . . . but there’s a unique twist to their story that is like no other.

Bill and Christine Bluhm have followed their hearts, trusted their feelings, and in less than three short years, have created a winery in Northwest Wisconsin that inspires a feeling of family for their staff, and a feeling of community for those who visit. You can learn more about their medalwinning wines on their website. But it’s the story behind it all that makes Dancing Dragonfly Winery a special place, and their wines, once experienced by your palate, will warm your soul and bring a smile to your face. Bill left an exhausting career in actuarial consultation. While his career was very rewarding, he became tired of the nationwide travel that took him away from family. So Bill made the decision to retire, trusting that his journey

Dragonfly Winery. Currently they have 45 acres of vines, and that will eventually grow to 52. The original barn on the land was not large enough to accommodate the event center and tasting facility. “Why would you do a vineyard if you can’t have a place to taste the wines,” Christine said. “With Bill, nothing is done small!” Story goes that Bill wanted to replace a couch once, and ended up remodeling the whole house. That’s why they now have a facility and an event center that can host up to 300 guests. They crushed the boulders from the original preparation of the vineyard to build the external pillars and walls of the event center and the log pillars inside are from the clearing of the trees on the property prior to the original planting of the vines. Back to the “trusting the journey before they had a plan.” While on vacation, Christine and Bill traveled to Sedona, Arizona, where Bill asked a psychic what he should do when he retired. Bill shared, “I was told that I would build something. Something big, it would be green, but I would build it, and people would come.” When Bill and Christine were on Bourbon Street in New Orleans, Bill asked the same question of another psychic. “I was told the exact same words! And I was told that ‘people will come to you to help you’! And they have!” Bill went on to share and experience he had on his solo canoe trip for reflection to the Boundary Waters Canoe Area, a 1,090,000-acre wilderness area within

the Superior National Forest in northeastern Minnesota. This is where his purpose became clear. The story, which can be found on their website, shares that when he was canoeing on Horse Lake a storm rolled in. After finding a camp site to weather the storm, it was the next afternoon that he gained clarity as to what he was looking forward to do in life. That

would land him in something that was fun, and allow him to be home every night. Why a winery, you ask? “Totally circumstantial,” Bill shared with a smile. “I got together with a friend to find an acre or so of land to experiment in wine making, but what came to us out of the property search was this parcel of 100 acres of farm land that is now Dancing

day, in the bright freshness one might experience the day after a storm, he was visited by a dragonfly, then another, then another, and in a short time he was standing among thousands of dragonflies, all weaving and dancing around him at his campsite. Slowly they cleared until there were a few, then just one, and then all were gone. A very spiritual culmination to the week! In many cultures, the dragonfly symbolizes such things as putting more lightness and joy into your life, to heed the winds of change, and live life to the fullest. Bill and Christine can relate to, “living for the moment,” so it is apparent that the dragonfly represents their belief of the virtues of living life to the fullest. Introduce Todd Schweim, Dancing Dragonfly General Manager. Bill says, “Todd came to us before we were even built, when there was just the land, and he wanted to be part of this.” “I just knew this was going to be something I needed to be part of,” Todd injected with true passion in his words. Along with their winemaker, Mark Wedge, they work as a group, a team that respects their common mission. “You will not hear ’good enough’ here,” expresses Todd. “We are mission driven as a group. The owners, the winemaker, and I all collaborate to make the best wines possible every season. There is no ‘tradition’ yet with cold climate wine making. As a group we are able to get the right flavor profile because every wine is evaluated and reevaluated through the collaboration of the team. Four opinions, four palates, there is no right or wrong answer, only the goal of making a better wine for you. So, decisions as a group become even more important.” Bill adds, “Everything is reviewed as a team. Christine and I invite controversy. It’s the only way we feel we can develop a better product. Every point of view is valuable. And when it comes to the wines, every palate is a little different, so we evaluate the wine with the same commitment.” The results tell the truth of their wine. In less than three years, they have over 1,000 Wine Club members, and have sold over 5,000 cases. This is quite an accomplishment for cold climate wine making. Bill says about their members, “We want to make their membership special. We respect that many of them are making special consideration, that they may not have a lot of disposable income, so we want their membership to be worthwhile.” Cold Climate Wines … Is cold climate wine making an art or a science? The answer is, “Yes.” This once farm land, which is located at the Western Terminus of the Ice Age Trail with its glacial heritage, offers a location compatible to cold climate wine making. Different from the more arid and tempered regions, cold climate wine making requires more sturdy vines

that can withstand temperatures up to 25 degrees below zero. Dancing Dragonfly Winery uses a geothermal heating and cooling system that is “green.” Elmer Swenson, a Wisconsin native, pioneered cold climate wine making through hybrid grape and vine development, making it possible for Wisconsin and upper Midwest states to have successful wineries. As necessary with cold climate wine making, Dancing Dragonfly Winery does use, on a limited basis, some west coast grapes as a blending tool to fill gaps for their red wine and port wine profiles. Todd explains, “It’s about how cold climate winemaking lends itself to ‘fruit forward’ wine. Like any winemaking, it’s about the flavor profile and how it balances.” Dancing Dragonfly currently offers 21 wines plus a newly released champagne, made up in combination of 9 white and rose wines, 7 reds, 5 specialty wines, and the champagne just introduced during a special dine and wine event at their facility this last New Year‘s Eve. Dancing Dragonfly also gives back. Bill and Christine have been inspired by what nature and the vines have given them. In their first year of production and sales, they donated nearly $50,000 to charity, and from their 2015 sales, will donate over $100,000 to charity. When asked about what they consider to be their signature wine or wines, Todd, with a confident yet humble smile says, “We are maturing as a winery at light speed. We have four to six signature wines based on our customers’ response.” Some of their wines from last season’s production are sold out already, a true testament to the popularity of their wines. All of their wines are named after dances. All of their food pairings offered are named after those known for their dancing. In addition to the event center being available for private events, they host specialty events such as comedy nights, music and dancing events, paint and sip, all including wine and pairings! Dancing Dragonfly Winery is truly a place for what wine is about: Celebration, romance, and living for today, appreciating the moments we have. As I was departing the winery, Christine reminded me with a twinkle in her eye, “And for our Arizona friends, yes, we do ship!” Dance a little, drink some wine, live for today . . . and live life to the fullest!
