Special thanks to Maria Hartley and her horse Pinta for being our cover models for this month’s issue. Adding to her own Casablanca polo equipment and saddle, Maria and Jill Hunter, our photographer, took a trip to the Casablanca store in Uptown Park to doll her up with a shirt and belt from the beautiful new men’s line. After signing up for polo school at the Houston Polo Club four years ago, Maria says she’s completely hooked on the sport.

he holidays are upon us, and a new year isn’t very far. But November is a month for family, friends and giving thanks. I’m grateful for new life, work, health and happiness. It’s so easy to get caught up in our fast-paced lives, but it really isn’t that hard to disconnect and get back to basics. Enjoy today, this moment, that coffee, the cool breeze, your mom – just stop and do it.

Thanksgiving is upon us, and we MUST ALL EAT TURKEY! Unless you are vegetarian, in which case you will likely be served faux-turkey, yet another option in an ever-growing sea of turkey options. But let’s talk eco, ORGANIC TURKEY. As far as the growing practices, the breed, the time – all those things are identical. “You have specific organic ranches so that you can maintain and ensure traceability right back to the farm,” says Heidi Diestel, family farmer at Diestel Family Turkey Ranch in the Sierra Foothills of California. Organic feed, a mix of corn and soy, has broader implications for both the animals and the environment. “It’s coming from a non-GMO grain. And there’s no pesticide or herbicide use. I think that general approach is a great one to support. But obviously not everyone can afford it,” Diestel explains. As for the difference in taste between organic and non-organic turkey meat, the jury is still out. “But where you really taste a sharp difference is in the Certified Organic Heirloom bird.
Those turkeys are an older breed. They are more rich and have that old-fashioned turkey flavor,” Diestel tells us of the 10-30 lbs. rare breed that dates back to the nineteenth century. Another notable eco-friendly choice is a pasture-raised turkey. Diestel’s are raised entirely on green, irrigated pastures fertilized with Diestel’s own compost mix and reclaimed water, and rotate with other animals every few days, interacting with other species. They also do not have access to a barn, using trees for shade instead and relying on natural instinct for survival. “We elected to create a multi-animal breeding program, to see how they interacted with the land,” Diestel says. “Claims on products can’t just be that. We create high-quality compost with feathers and cardboard and waste that we donate to schools and sell to Master Gardener clubs. Date With A Pig is quite popular: a sweet medjool date and some local chorizo, wrapped in local bacon and covered in a chermoula sauce. I just sampled it. If there had been a platter full of them I might have cultivated a new food addiction. For my entrée, it was full-on comfort food: flattened chicken, lightly breaded and over a pile of mashed potatoes. Simply wonderful. Then as if that wasn’t enough, I was sent some affogato, a super creamy, coffee-flavored gelato with a few kernels of popcorn and a piece of toffee stuffed in for good measure. It might be the secret to world peace. SAMPLE MENU

“Our customers tend to be an eclectic crowd from all over the world. They love food. They’re not intimidated by unusual dishes or ingredients. It’s satisfying when you can get someone to experience something they might not have tried, because they haven’t ever had Brussels sprouts that way.” I can identify. As we visited, we snacked on “Chick” Fries, Brussels sprouts and a Date With A Pig. The fries are dashed with Indian salt and you can dip them in a red curry catsup, which has quite a nice little kick. I loathed sprouts as a child, but at Sparrow they’re quartered, fried, salted and blessed with a caramel coating. They made a wonderful finger food and I gobbled ’em up like peanuts.

Seriously, Sparrow is about building community, creating a relaxed, comfortable setting for folks to enjoy good company. Wanting more, I went back for happy hour several nights later. I indulged in the list of 12 original cocktails all featuring interesting combinations of fruits and vegetables and spirits. The #9 had Bullitt Bourbon, ginger beer, chocolate bitters and a cucumber slice. Refreshing, interesting, satisfying.

There is something inescapably cool, healthy and right about Sparrow. BCN TASTE AND TRADITION | CHEF LUIS ROGER
Calling itself “a nod to the city of Barcelona,” the highly anticipated opening of BCN (the three-letter abbreviation for namesake city) has foodies scrambling to try elBulli-trained Chef Luis Roger’s take on Spanish cuisine. Owner, entrepreneur Ignacio Torras has set his dream into motion within a beautifully renovated 1920’s era home, close to the University of St. Thomas. The two-story space, designed by Augustin Orozco is sexy, warm and inviting, and includes artwork from famous Spanish artists Joan Miro and Pablo Picasso. The vibe is traditional meets modern. Many of the ingredients and even some equipment have been sourced directly from Spain, including the mouth-watering Iberico Ham which is served with slices of bread rubbed with raw tomato for a rustic and satisfying dish. Other appetizer highlights include a lovely watermelon and burrata salad with baby greens, basil leaves and vinegar reduction. Seafood is an obvious focus including a rich lima bean stew with clams and a wild-caught whole branzino is a head-turner while poached cod with saffron aioli gratin and fresh vegetable ratatouille feels like a dish Chef Roger might have eaten growing up. Beef options are of the local, grass-fed variety in cuts such as tenderloin and a “cowboy” bone-in ribeye, plus pork, lamb and duck

Paco Calza, who worked for Robert Del Grande for nearly three decades manages front of house and beverage program for this, the latest see-and-be-seen place in town.

CIA grad, Four Seasons and Barton Creek alum, Executive Chef Phil Bouza has taken the helm at the San Luis Resort. Existing chefs, Executive Sous Chef Felipe Gonzales and Chef Josh Roberts launched the new Blake’s Bistro a beautiful fresh space at the resort, with lively colors and rich woods looking out towards the Gulf. The restaurant serves breakfast, lunch and dinner with menu items ranging from egg dishes, oversized sandwiches and burgers to serious entrées like the smoked pork chop with cheddar/wild mushroom grits and roasted root vegetables. And Cup & Cone, next to Blake’s, features acclaimed Pastry Chef Miguel Michael’s magic with pastry, chocolate and “confectionary arts” along with Starbuck’s coffee offerings. There are fresh menu options at The Steakhouse, where we enjoyed a delicious kale and citrus salad (with jicama, dried cranberries, candied walnuts, goat cheese and a fantastic mint vinaigrette) and the sesame-crusted Ahi tuna with crispy wontons, ponzu and toasted chili oil. At Grotto, we were impressed by the variety of tasty pizzas including the roasted herb chicken with caramelized onion, roasted tomato, mozzarella and tangy goat cheese. Housemade pastas include the excellent shrimp and crab capellini featuring super-fresh Gulf shrimp and jumbo lump crab tossed in a Bianco sauce with the pasta. There’s so much happening in Galveston and The San Luis is the perfect hub to experience it all.

HOLLEY’S | CHEF MARK HOLLEY
Chef Mark Holley is best known for his gig at Pesce, which closed in 2012 after being acquired by Landry’s. The restaurant is expansive, with varied dining options including the casual 75-seat oyster bar featuring a shucking station and a grill for barbecued grilled oysters. But there are also Pan-American offerings, such as ceviche and crudo along with oyster shooters and a selection of American caviars plus numerous shellfish options. GM and sommelier Paul Ramirez oversees the bar featuring Southern cocktails and a myriad of bourbon options. One must mention the gumbo; even better than I had hoped for, with its beautifully seasoned duck confit broth and fresh Gulf shrimp, topped with two fried oysters. We also gave into temptation and ordered the bread service: Parker House rolls, served with poblano-pimento cheese, smoked drum mousse and pickled veggies. Of the numerous fish entrées, we opted for the blackened grouper, seasoned and seared perfectly, atop lady creamer peas and rice, with a layer of kimchi greens flavored by ham hock pot liquor between the rice and fish. We added one of the ceviche appetizers as an entrée, going for the “fish in a jar” with shrimp, scallops and snapper in a charred orange marinade. I’m not sure how to describe the coconut cake except to say, “Whoa.” I don’t think I’ve had anything like it since childhood Thanksgivings. I can’t stop thinking about Holley’s cake. Chef Holley is now taking reservations for his once-a-month fried chicken dinners. Don’t be surprised if you have to wait well into next year but do yourself a favor and make the ressie now.

THE WHO: Couples, friends, Heights moms, Heights dads with sweet teeth, hipsters, friends of the owners, kids who couldn’t find A 2nd Cup, people looking for a happy hour with dessert, daily work commuters and plenty of Crossfitters. Since opening a few months ago, Red’s front door hinges are kept busy. Tastefully renovated, Red’s interior space is delightfully welcoming and great for staying a while too. THE BREW: While Red centers around the sweet and savory, they didn’t overlook the coffee. Utilizing beans from local roaster Boomtown Coffee, Red crafts all the right drinks to accompany the food. Our Cortado was flawless, and we watched 3 people order iced vanilla lattes in 5 minutes. We are obligated, but mostly are excited, to mention Red has a solid offering of wines by the glass and local beers because if you have not had booze and dessert, you are missing out! THE FOOD: All made in house, “sweet” includes pies, bread puddings, cakes, puddings, housemade ice cream, cookies, muffins, croissants and scones…we probably missed a few! Savory? Eat the beer bread! Kolaches, sandwiches and a salad and cheese plate help fill in for breakfast or the times when a dessert isn’t quite filling enough. were lucky to have experienced first-hand the wickedly whimsical world of WENDY WAGNER, who passed last month. Her spirit and amazing outlook on life even after being diagnosed with a malignant brain tumor will live on in her work. She had 16 solo exhibitions and was included in numerous group exhibitions.In 2008, Wendy’s mixed media painting, I Hope I’m Dreaming, was selected from nearly 900 artists’ submission for the prestigious Hunting Art Prize. That same year her work also graced

our December cover. Her most recent solo exhibition, Look to the Left, debuted in Austin in early 2013 at Women & Their Work Gallery and was covered by The New York Times. Look to the Left was her last and largest solo exhibition, miraculously taking place after surviving five brain surgeries. Preserving the spirit, vision and legacy of its namesake, the Foundation provides scholarships, grants, project support and emergency healthcare resources to those who color our world. That spirit is found as well in Qwerkys! (qwerkys.com), an animated TV series that Wendy created with creative partner and husband, Kenneth, in 2006, teaching the importance of individuality through art, music and deliciously whimsical candy-like visuals.

Two local aspiring film composers will present their original winning musical scores for Houston Public Media’s Silent Film Concert Series at Discovery Green on Friday, November 14. The winners will complete their scores for the silent film they selected for the contest, gather their ensemble performers, practice, record their musical scores in the studio and get ready to showcase their talents in front of about 1,000 people at Discovery Green. Jaime Arroyo Jr., age 27, is composing a score for The Boat, a silent film directed by Buster Keaton and Edward Cline. Gerald Massoud, age 30, is composing a score for The Rink, a silent film directed by Charlie Chaplin.

ARTS ON OUR RADAR For ten years Dance Source Houston has had one goal in mind: to create a hub for the dance community that will serve as a connection between companies and artists, and as a central advocate for contemporary dance in Houston. Beginning with straightforward and necessary services such as the Dance Card, a printed dance calendar found in playbills across the city, Dance Source has grown, now managing The Barn – Dance Source Performing Art Space which provides performance opportunities and offers a large variety of marketing and support services geared toward helping the Houston dance community thrive. Dance Source kicks off their 10-year anniversary celebration on November 6, from 7–9pm, with a unique fundraising event at The Barn. The celebration will feature music, food, drink and the debut of Truck Dances. Lydia Hance, Artistic Director of Frame Dance Productions, has been commissioned to create a new work using two box trucks as her stage. The title refers to a loose network of citizen militias who have co-opted the name of a Reconstruction-era law that limited federal power, and who espouse survivalist methods as a means to defend individual liberty. IN THE “TOTALITY” VIDEO, WHAT IS THE THEME YOU WANTED TO GET ACROSS? The initial concept was that we wanted to say, “Hey, what if we did a video where the song started off as a big bang, and it ended when the sun went into a supernova?” So it tracks from the beginning of time to the end of time. We have the big bang, we fly through, we have things in fast motion… and then the guys were talking about, “Well, you know, we have these themes. We have time, we have Mother Earth, we have water…” Okay, what if we had those represented by what I call like nymphs, or goddesses? So they started throwing out all these ideas and we just started incorporating them. But I would say the core concept was just the totality of time, in this one video, from the beginning to the end. The question we asked ourselves was, “What would happen to a person if suddenly they just knew the totality of all knowledge?” If they knew everything. You know, if they used that to get rich, like how would their lives change? Vince was like, “Well, I think people would go crazy, and get depressed.” AND YOU HAD ANOTHER VIDEO, “BAD RUDOLPH”? Yeah – we were on a little hiatus, and we were like, “Well, you know, we’ve been kind of inactive. Why don’t we do a holiday song? But let’s make the video kind of out there.” And we got a great response from people, but we had a couple of people who were like, “How dare you do that to Christmas!” We were, like, “Whoa! Hey, we were just tryin’ to do a different take. We mean no disrespect to you, but if it makes you feel any better, that weed that Santa was smokin’ wasn’t real.” ARE WE ALONE IN THE UNIVERSE? Oh hell no, man. But if you talk to the different members of the band, you’ll get different stories. I mean, I think we didn’t even originate on this planet as it is. DEFINITELY NOT. WE’RE SPACE DUST. It’s so funny, because the members of the band, we do come from different aspects. Me, I’m a Daoist. I don’t believe in a Christian God. I do believe in a higher power, but if tomorrow the Christian God came down and said, “Hey, you fucked up,” I’m open to that, you know what I mean? It’s possible. I’m not closed off completely to the idea. Vince is a complete Atheist. He’s just… he’s not havin’ that. There’s no room in his mind for the concept. Richie, the drummer, is a preacher’s son, so he’s at service every Sunday. Rick does his thing. Man, I don’t even know, he hardly talks about it. But then you have that dichotomy in your band, and it’s so weird to be able to just exist, chill and be able to create together. So you talk to each of these different guys and you’ll get a different perspective. But, no, there’s no way we’re alone. I’ll tell you two interesting things that had me scratching my head. One was in Antarctica – they found this bacteria that they didn’t think could survive at such cold temperatures. Same bacteria that they found in the Yosemite hot springs, which they felt was too hot for any organism to survive. They were studying it and said, “Oh, you know, it doesn’t even need oxygen. It exists off of nitrogen.” They did all this research, they found all of this, and then they found a meteorite that came out of the sky and found fossilized fossils of the same bacteria. On meteorites. And then they say, “Well, if it doesn’t need oxygen, and if it can survive these cold environments and these hot environments, it can survive the coldness of space and the heat coming in.” So there’s no way we’re alone, man. www.lotuseffectmusic.com

ovember is National Recovery Month. Although chronic homelessness among individuals is declining thanks to organizations nationwide like SEARCH Homeless Services in downtown Houston, the statistics are still alarming reminders of the devastating disparities that many Houston individuals and families face simply because they lack a safe roof over their heads. Housing affordability, lack of good, affordable health care, mental illness and substance abuse/addictive disorders are often the culprits. SEARCH helps thousands of people each year cycle from the streets into jobs and safe, stable housing. Recent reports reveal that 12 out of every 10,000 persons in Texas are homeless (down from 15 out of every 10,000 persons in 2011, with approximately 6,300 people in Houston experiencing homelessness on any given night – U.S. Department of Housing and Urban Development).

Don Hall is a long-term recovering addict who has witnessed first-hand SEARCH’s range of programs targeted towards full homelessness recovery and continues to talkthe-talk of recovery advocacy to clients. Hall shares his life experiences and his acquired professional training as a licensed chemical dependency counselor to educate thousands of lives as they transition from the streets into stable housing. “As a person in long-term recovery, I’ve always enjoyed working with the worst-of-theworst – basically people who have had similar experiences to my own – to help them get their lives back on track. Shortly after receiving my certification as a drug abuse counselor, I began working at SEARCH in the fall 1995, have been there ever since.” From running in 5K marathons to creating awareness about homelessness, substance abuse, fitness and health, Hall is employing his most recently acquired certification as a personal trainer to coach and train SEARCH clients for marathons, in pursuit of better health, better fitness and a better outlook on life. “I’ve taken my recovery advocacy to the streets a step further by training and participating in the “Chevron Houston – Run for a Reason 5K Run/Walk” on behalf of SEARCH, where I’ve also been instrumental in helping our organization raise sizeable dollars towards this effort.” Hall will be running the full Chevron “Run for a Reason Marathon” in January 2015. by Susan M. Whether playing at the Houston Polo Club adjacent to Memorial Park or at one of the ranches just west of the city, the serenity of working with horses and spending time outdoors is a great way to release stress and reconnect with nature.

I
fell into polo rather unintentionally, having had no prior riding experience beyond the occasional trail ride. Polo was certainly not a sport that I ever thought would be in my future. The combined coordination of riding a horse at speed while balancing on top of a tiny English saddle, carrying the reins in one hand and a mallet in the other and simultaneously swinging at a small ball approximately three inches in diameter seemed impressive, but light years away from ever being achievable.
Today, two years later I’m a lot less awkward and not at all fancy. Learning to play takes an enormous amount of persistence and humility in addition to hours of sweat equity and patience. But the payoff is big. My coach, Bonni Roybal, is 68 years old and one of the first female professional players in the country. She shares, “I have played this sport for over 40 years and it is still brand new. Polo is never mastered but rather a lifetime commitment to refining game knowledge and skill.”
However, on a cold and drizzly February morning several years ago, I stumbled onto a polo ranch just west of the city for a photo assignment and before I knew it, was on top of a horse with a mallet in hand, feeling half-fancy and mostly awkward. I walked a few steps and made an attempt to swing at the ball. Whiff. All air. I tried again. A rush of adrenaline and euphoria poured through me as I finally made contact and pushed the ball forward in front of my horse.
At any level, it’s a thrill to play and to practice, and as a team sport, it creates a strong bond between players – especially for those of us who are all learning how to play together.
I was hooked. I signed up for lessons a few months later, and before long, I was trotting along and making contact with the ball more often than not. It was a milestone.

David Marks, who took his first polo and riding lesson 13 years ago at 49 years old and started out in the beginner-level Margarita League, agrees. “It’s such a humbling sport, but that’s what I love about it. The challenge is to stay with the pro. Every now and then the underdog wins, and that’s particularly exciting.” As for me, I’m in training right now to participate in my first Women’s Tournament at the polo club the second week of November.

“I was one of those kids that always had to have the latest shoes and nicer clothes,” the 26-year-old says. Somewhere along the line, Jackson was dubbed best-dressed on the team and admits this could be his post-football calling. “Hopefully I’ll be playing the game a long time – as long as God will allow – but it’s something to think about. It would be interesting to design clothing, shoes or whatever the opportunity may be,” the cornerback says. Jackson says creating his line was fun and in-depth. “This was my first chance to actually design something, and it was a lot harder than I thought. So many fabrics and colors I had to narrow down, then I had to think about things the fans like and wanted to pay tribute to Houston. That was pretty much the thought process,” he explains.
Jackson may be the best-dressed, but he isn’t the only one vying for the title. “We definitely have some guys that are into fashion, but I’d like to say I’m one of the best-dressed on the team,” he says. Jackson gives the second place fashion-forward accolade to fellow cornerback Johnathan Joseph. “We have pretty similar taste and probably Andre (Johnson) next – we all think alike when it comes to clothing.” Even with The Galleria around the corner, Jackson admits he finds most of the good stuff online. “I think there’s more variety – tons of websites people may not know about. Some may be a bit exclusive. Going in the mall you’re taking a chance of somebody having the same thing. It’s the same online but chances are slimmer,” Jackson shares.

Mr. Porter (mrporter.com), FarFetch (farfetch.com) and SSENSE (ssense.com) are some of Jackson’s frequented online shops, but admits his wardrobe is diverse. He says it’s all in the shoes. Find a nice pair and you can build from there. “If I decide what shoes I want to wear, then I can get my jeans and shirt and so forth,” he says, admitting he has at least 200 pairs. He could probably give Carrie Bradshaw a run for her money, and says you can’t go wrong with Louis Vuitton shoes. As the months get colder, Jackson finds himself getting excited about winter fashion. “That’s the time of year you get a lot of different clothing – your sweaters, jackets, pea coats, cashmere and all that stuff,” he says. We are smitten with Campfire Quilts handmade by Ebony Porter right here in Texas. The heirloom quality of her work is insane. This particular piece, Four Corners Quilt is made of pure cotton and entirely hand quilted using Japanese sashiko thread. Ebony shared with us,
“The design arose intuitively in piecing together scraps of white and red. Following a long tradition in American quilting, I too wished to add to the line of red and white quilts. As the design developed it became clear to me that there was a strong navigational energy to the quilt top and the deep red color took me into desert landscape and formations of the American West. Reminiscent of the Four Corners area that borders Colorado, New Mexico, Arizona and Utah, the Four Corners Quilt became.”

Wanting to be close to his previous location, this charming new store has grown to become a wonderful retail space unlike any other. With less than two months between signing the lease, doing the interior design themselves, putting together and successfully pulling off the grand opening – the David Peck team did it all with a classic but fresh and modern vision. “I wanted to play with texture and patina. I’m not a big fan of everything matching, so I want the space to feel like it had been created over time while still being paired down and curated,” says Peck. The dynamic and open space has beautifully transformed old ideas into elaborate and more intimate moments.“ I love how the fitting rooms have evolved,” says Peck. “They grew from an idea in our old space, but are so much more functional now. We have more rooms which create the opportunity to have ‘moments,’ like a powder room that is unexpectedly moody or dramatic.” The newest David Peck Flagship has an additional 1500 square feet with 20 full-time employees and another 20 contract workers, “I’d love to see us really settle into this space and then start working on additional locations…maybe The Woodlands!”
