I

am one part city slicker, one part beach bum, and no parts cowgirl. So when I stepped off the plane in Tucson, Arizona to visit the Tanque Verde Ranch for the latest edition of our Eco Escape series (page 24), I was a fish out of water. I’ve traveled through the desert before and am very much drawn to the wide open spaces and otherworldly topography, but ranch life is a horse of a different color. I’m not quite sure I’ve even been within five feet of a horse before, let alone on one. But from my first ride through the rolling hills, I was hooked. That’s the magic the ranch offers—a chance to step back from busy, modern life, ditch the technology, immerse yourself in horse country, and reconnect with nature and those around you. Wherever you go this summer, I hope you and your kids take the chance to pause and enjoy the great outdoors together. What I love so much about this latest issue is that it highlights a return to nature, not just with our ranch visit, but with our mustread story on Regenerative Agriculture and its role in curbing global warming (page 10). And with our healthier barbecue recipes, we’re giving you the perfect excuse to get outside and grill (page 14). We also delve into the world of natural personal care with our story, “Take the Toxins Out of Your Beauty Routine” (page 30). Everyday, I lather, dab, and brush 22 different beauty care products onto my face and body. In the past, I didn’t give much thought to the hard-to-pronounce ingredient list hiding in plain sight on the back of these products. So in this issue, we dive into some of the top toxins commonly found in mainstream beauty products and offer alternatives to clean your beauty routine. And don’t think we’ve forgotten about outdoor summer fun! SUMMER SKEWERS Grill up some fun with these easy, healthy recipes the whole family will love!

SHRIMP, MANGO & RED ONION SKEWERS Paired with a Thai-inspired dipping sauce, this sweet-and-savory dish is a great way to introduce kids to new flavors. 5 Tablespoons orange juice, divided 1 Tablespoon coconut oil 2 scallions, chopped, divided 2½ teaspoons reduced-sodium soy sauce, divided 1 teaspoon brown sugar or coconut sugar Salt and pepper

16 large shrimp, peeled and deveined 2-3 mangoes, depending on the size, peeled and cut in chunks, divided 1 red onion, peeled and cut in wedges 2 Tablespoons chopped fresh cilantro 2 teaspoons honey

1. Preheat the grill. 2. In a small bowl, combine 3 Tablespoons orange juice, coconut oil, 1 Tablespoon chopped scallion, 2 teaspoons soy sauce, sugar, salt, and pepper. 3. Place the shrimp in the mixture and allow to marinate for 30 minutes in the refrigerator. 4. Thread six presoaked skewers with the shrimp, mango, and onion. 5. Place skewers on the grill and cook 4 to 6 minutes, turning once, until the shrimp are cooked and no longer opaque. 6. To make the sauce, use a blender to puree the remaining mango with the remaining orange juice, soy sauce, scallion, and honey. Add salt and pepper to taste. 7. Serve the skewers with the dipping sauce. Makes 6 servings Per serving: 382 calories, 26g fat, 20g protein, 20g carbohydrates, 7g fiber, 11g sugar

1. Preheat the grill. 2. Place the peppers on a work surface. Slice off the tops and remove the seeds. Place a teaspoon of pesto and one chunk of mozzarella in each pepper. 3. Thread the peppers, zucchini, and squash onto six presoaked skewers. (The peppers will stay together when threaded.) 4. Brush the skewers with olive oil and more pesto and place on the preheated grill. Cook until the cheese oozes and the vegetables are cooked and golden. CHICKEN & CORN ON A STICK

This tasty main dish takes full advantage of the summer corn season. ¼ cup olive oil ¹⁄8 cup Italian parsley, chopped 1 Tablespoon shredded fresh basil 1 clove garlic, minced 3 chicken breasts, boned, skinned, cut in chunks 2 ears corn on the cob, cut in 1- to 2-inch pieces ½ pint whole cherry tomatoes 4 scallions, cut into 1-inch pieces Salt and pepper 1. Preheat the grill. 2. In a small bowl, combine the olive oil, parsley, basil, and garlic. Divide the mixture in half. 3. In another small bowl, combine the chicken with half the marinade. Marinate for at least an hour. Thread six skewers with the chicken, corn, tomatoes, and scallion. Salt and pepper the skewers. 4. Cook until the chicken turns golden brown and the vegetables are cooked, about 7-10 minutes, turning once. 5. Just before serving, brush the skewers with the remaining parsley oil. Makes 6 servings Per serving: 295 calories, 3g fat, 26g protein, 18g carbohydrates, 5g fiber, 9g sugar

The classic flavors of pineapple upside-down cake get an upgrade with this skewered version. 2 cups pineapple, peeled, cored, and cut in chunks 2 cups pound cake, cut into chunks or fun shapes using a cookie cutter 1 cup fresh cherries, pitted ¼ cup pineapple juice 2 Tablespoons brown sugar ²⁄³ cup vanilla yogurt 2 teaspoons brown sugar ½ teaspoon crystallized ginger, finely chopped ½ teaspoon vanilla 1. Preheat the grill. 2. Thread the pineapple, cake, and cherries onto skewers. 3. In a small bowl, combine the pineapple juice and brown sugar. Brush on the skewered fruit. 4. In another small bowl, combine the yogurt, brown sugar, ginger, and vanilla. Set aside. 5. Grill the skewers for 2-3 minutes, turning to cook evenly and being careful not to burn the cake. 6. Serve the skewers warm with the dipping sauce.

BLUEBERRY LEMONADE 1½ cups blueberries ž cup coconut sugar 8 cups water, divided juice of 3-4 lemons (to taste) 1. Add blueberries, sugar, and 1 cup water to a medium saucepan. 2. Bring to a boil, then simmer over low heat, stirring frequently until sugar is completely dissolved (approximately 3-4 minutes). 3. Strain blueberry mixture through a colander and into a bowl. Cover the bowl and allow mixture to cool completely in refrigerator, approximately 1 hour. 4. Add lemon juice and 7 cups cold water into a pitcher, then stir in blueberry mixture. REAL FRUIT PUNCH 1 cup strawberries, stems removed 1 cup sliced peaches 1 cup raspberries 1 cup cherries, pitted 16 ounces 100 percent pineapple juice 5-6 ice cubes 1 cup water 2 tablespoons coconut sugar 2 liters sparkling or still water

Take the TOXINS Out of Your Beauty Routine

hen it comes to health, it’s crucial to not only care about what you put in your body, but also what you put on your body. According to the Environmental Working Group (EWG), women use an average of 12 personal care products daily while men use an average of six. These beauty and personal care products do not follow the same stringent regulations that food does. There are no industrywide safety standards and the Food and Drug Administration does not conduct any testing before these products hit the shelves. This leaves the consumer plenty vulnerable for coming into contact with toxic ingredients that are then absorbed, inhaled, or ingested into the body. With longtime use, which is common in beauty and personal care, this toxic exposure can do real damage. Studies have shown some beauty product ingredients cause cancer, damage the reproductive system, and act as hormone and endocrine disruptors. While there are many toxins lurking in shampoos, lotions, and cleansers, below you’ll find some of the top ingredients to look for and avoid when making an informed purchase. Phthalates According to the CDC, phthalates are plastics used as dissolving agents in products ranging from vinyl flooring to soaps and shampoos. The EWG says this family of chemicals has been shown to damage the male reproductive system. Sometimes phthalates hide under the misnomer of “fragrance”.

Parabens This chemical is commonly used as a preservative. The Campaign for Safe Cosmetics lists it as an endocrine disruptor with links to skin cancer and reproductive damage.

Ethanolamine Compounds (MEA, DEA, TEA And Others) This family of chemicals is used in shampoos, soaps, mascaras, foundations, and more. According to the Campaign for Safe Cosmetics, they have been linked to liver tumors. The European Commission has classified them as known carcinogens and prohibited their use in beauty and personal care products.

Formaldehyde & Formaldehyde Releasers According to the EWG, formaldehyde is a known human carcinogen. Although use in personal care products has decreased, it is still found in some hair straighteners. Formaldehyde releasers, used to kill bacteria, can irritate the skin and cause allergic reactions. They are still readily found in cosmetics and personal care products like shampoos, body washes, and soaps.

Coal Tar Used in hair dyes, shampoos, conditioners, and more, this toxic chemical is a known human carcinogen. The EWG says hairdressers in the U.S. are exposed to this chemical regularly in hair dye. It is banned as an ingredient in hair dye in Europe.

Artificial Fragrance Fragrance as an ingredient can be misleading as it is often used as an umbrella term for different ingredients. While not always the case, brands can lump possible toxic ingredients under the “fragrance” label without coming out and naming them. According to the EWG, there are 3,100 stock chemicals, some of which have been linked to hormone disruption and sperm damage, that can be classified under the term “fragrance”. kiwimagonline.com 31

BLUEBERRIES Why we love them: Low in fat and free from saturated fat, sodium, and cholesterol, blueberries

offer up a good source of dietary fiber, manganese, and vitamins C and K. Don’t be fooled by their tiny size, as blueberries pack a high antioxidant punch, helping protect the body against free radicals. This summertime fruit is sweet, low in calories, and great for on-the-go snacking..

How to choose them: Go for the blueberries that are firm and plump with a dusty, deep blue hue. Steer clear of ones that look shriveled or have mold on them.

How to store them: Fresh blueberries should be refrigerated and can last up to two weeks. You should not wash blueberries until right before eating to extend shelf life. Frozen berries can last in the freezer for up to eight months.

Delicious ways to use them: Blueberries are the perfect, poppable fruit to eat by themselves, or

mix in a smoothie, sprinkle atop oatmeal or yogurt, bake into pies, scones, or muffins, or puree into a sweet sauce to drizzle over ice cream or cakes.
