W

hen we started putting this issue together we planned for it to be the ‘Summer of Celebration’ edition but as we progressed closer and closer to the deadline it became obvious that in Australia at least, celebration was something we were only just dipping our toe back into. With Covid-19 lockdowns being reintroduced in some countries and most of the world only just taking a tentative step out into the unknown, we wanted this issue to be all about our summer of dreams, to get excited and inspired about the hope of a fresh start, of far-flung destinations and dreamy summer days. In this issue we are nostalgic for classic Australian summer destinations (pg 52) that remind us of the simpler summer holidays of our childhood.

We seek out a day trip destination that is a little left of centre when we visit a cactus farm in Victoria (pg 66), and we wrap up some of the best that is on offer in South Australia’s McLaren Vale (pg 64). Whatever your plans are this summer we dare you to dream big, to make memories and to re-enter the brave new world.

A SWEET START

Homemade Lemon Icy Poles Ingredients (makes 4 icy poles) Juice of 4 large lemons 4 thin lemon slices 1/2 cup of near boiling water 1 tbsp of sugar

Method 1. Dissolve sugar in near boiling water. 2. Once cooled, mix sugar water with fresh lemon juice. 3. Add a thin slice of lemon in to each icy pole mould. 4. Pour lemon juice mix evenly in to each mould and insert icy pole sticks. 5. Place in freezer for 5 to 6 hours until the icy poles are fully set. 6. Use a little warm water on outside of moulds to loosen the icy-poles from the moulds. Serve and enjoy the sweet, lemony goodness!

ondi’s latest restaurant offering, Lola’s Level 1, is a Mediterranean restaurant and bar from Sydney hospitality veteran’s Marco Ambrosino and Manny Spinola, overlooking famous Bondi Beach. Co-owner Ambrosino said “we’re excited to finally open the doors to Lola’s Level 1 in Bondi. Lola’s is all about fun and we’ve assembled one of the best restaurant teams in Sydney that will be able to deliver that. We want Lola’s to be approachable, a place where you can drop in for a drink and some oysters; a place for a dinner with the family; or a long lunch on the balcony overlooking Bondi. The menu is focused on the plancha grill, and we’ll also be serving beautiful oysters shucked at the bar. cocktail hour Cocktail wizz, Grant Collins, from Gin Lane whips up some deliciously tempting cocktails to indulge in this festive season. Tahiti Passionfruit & White Chocolate Rum I wanted to create a “Tiki” style Polynesian drink based on the rum and passionfruit, and white chocolate flavours with the Tahiti recipe. I redistilled some barrel-aged rum with the new Magnum Tahiti ice cream. This created an amazing soft silky Rum with pronounced tasting notes of passionfruit and white chocolate. I mixed the distillate with pressed vanilla pods, white chocolate syrup, pressed passionfruit, pineapple cordial and pineapple skins. Finishing the drink with a dusting of cinnamon, nutmeg and pineapple frond as a garnish - it takes you straight to Tahiti! Ingredients:

45mls Spiced Rum 10mls Vanilla 10mls White Cacao 80mls Passionfruit juice 60mls Pineapple juice Pineapple chunks (garnish) White chocolate (garnish) Cherry (garnish) Recipe

Pour 45mls of Spiced Rum and 10mls of Vanilla into a shaker. Add 10mls of White Cacao into your shaker with 80mls of Passionfruit juice and 60mls of Pineapple juice. Add ice and shake well. Pour into a tiki mug or a tall glass over ice. Garnish with a tropical umbrella, pineapple, grated white chocolate and a cherry. Pairing - Pair your cocktail with the new Magnum Destinations Passionfruit White Chocolate ice cream inspired by Tahiti. Glass & equipment: Tiki mug (or tall glass), shaker, and ice. Drink notes: A decadent Polynesian Tiki explosion of tropical flavour served in a tiki mug.

las vegas bellini This recipe was inspired entirely by Las Vegas, the party capital of the world. I wanted to create an experiential drink which showcased Las Vegas all in one glass. With so many first attempts of tasting, it just was too sweet. So, I created my own citrus-based Gin with five botanicals then redistilled it with the new Magnum Las Vegas ice cream with a Schik Rotvavpor. The results were exactly what I was looking for with a healthy splash of Tequila, Lillet Blanc and charged with Prosecco. The flavour notes contain a hint of light, rich chocolate on the first sip, followed by a long dry, caramelised cane cookie finish. When biting into the new Magnum Las Vegas ice cream, the drink accentuates the caramelised chocolate flavours with its dry, rich finish rather than making it overly sickly sweet.

Bee S ting Cake Ingredients (Serves 12)

300 g (10½ oz/2 cups) plain flour 55 g (2 oz/¼ cup) caster (superfine) sugar 2 teaspoons dried yeast 185 ml (6 fl oz/¾ cup) milk, at room temperature 2 eggs, at room temperature 60 g (2¼ oz/¼ cup) softened butter, chopped ½ teaspoon salt

Honey almond topping

90 g (3¼ oz/⅓ cup) butter, diced 50 g (1¾ oz) honey 75 g (⅓ cup) caster (superfine) sugar 40 ml (1¼ fl oz) thick (double) cream 150 g (5½ oz) flaked almonds

Filling

500 g (1 lb 2 oz) cream cheese, softened 250 g (9 oz) ricotta cheese finely grated zest of 2 lemons 2 tablespoons lemon juice 125 g (4½ oz/1 cup) icing (confectioner’s) sugar, sifted Method Preheat the oven to 170 C (325 F/Gas 3). Grease and line the base and side of a 23 cm (9 inch) spring-form cake tin. For the filling, put the ingredients in the bowl of an electric mixer fitted with the paddle attachment and beat until just combined. Refrigerate until needed. For the cake, put the flour, sugar, yeast, milk, eggs, butter and salt in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes. Scrape the batter into the cake tin and spread out evenly with a spoon or offset spatula. Place the tin in a clean plastic bag and tie to enclose. Leave in a warm, draught-free place and allow to rise for 1–1½ hours. Meanwhile, make the topping. Put butter, honey, sugar and cream in a medium saucepan over medium heat and bring to the boil. Simmer for 5–6 minutes until the mixture turns a slightly darker shade of yellow. Add almonds and stir through. Remove from the heat and allow to cool until the cake dough has finished rising. Starting at the edges, spoon the topping evenly over the cake dough and bake for 30 minutes until golden brown. Cool in the tin for 10 minutes on a wire rack set over a baking tray to catch any caramel drips. Release the side of the cake tin and remove the baking paper from the side. Leave until completely cool before slicing. Use a long serrated knife to halve the cake horizontally. Place the top half on a flat plate. Spread the filling evenly over bottom half of the cake using a palette knife or spatula and cover with the top layer of the cake. Bee sting cakes are best eaten on the day they are baked, though they can be partly prepared the day before: keep the risen dough in an airtight container at room temperature, then bake and fill the following day. Note: You can also use a non-spring-form tin; just let the cake cool for 20 minutes before turning it out. Be very careful as the caramel will still be warm.

Chamomile Honey Ice cream Ingredients (makes 1 litre)

Method

560 ml (19¼ fl oz/2¼ cups) milk Place milk, cream and chamomile tea leaves in a small saucepan. Bring to the 400 ml (14 fl oz) thin (pouring) cream (35% milk boil and remove from the heat. Cover and leave to infuse for 30 minutes. Pour fat) through a fine sieve into a large jug and discard chamomile leaves. 1 tablespoon chamomile tea leaves 200 g (7 oz) honey Heat honey in a medium saucepan over medium heat and allow to boil for 5 8 egg yolks minutes until it begins to caramelise - do not allow it to burn. Prepare a large metal bowl set over a bowl of ice - you will use this to cool the milk and yolk mixture. Pour the milk and yolk mixture into a clean saucepan and stir over low heat until it reaches 82 C (180 F) or begins to thicken - do not allow it to boil. Pour through a fine sieve into the large metal bowl set over ice and allow to cool. Cover with plastic wrap and refrigerate until cold. Churn using an ice-cream machine according to manufacturer’s instructions. Note: Churning the mixture before it’s cold may mean your ice cream doesn’t set, so don’t rush it. You can place the custard in the freezer for 30 minutes or so to speed up the cooling process.

arm summery nights and longer days call for gathering together family or friends to eat, sip a refreshing drink and feast the night away. Invite your guests over and keep it simple with fuss-free easy food that is tasty and totally delicious served with a side of fresh air! I’ve written these recipes with exactly that in mind and, when made together, they complement each other using similar ingredients. Not only do they taste great but a lot of the preparation can be done ahead of time. A simple stripped down approach making marinades and dressings earlier and even making the dessert in advance makes entertaining more relaxed. Set up a simple shared table outside, add some fresh blooms and a pretty tablecloth to brighten up your dinner table and you will be set for a casual, social and fun night. Serve the dishes on big shared platters ready for your guests to help themselves. These recipes are super easy and even those of us that aren’t overly confident as cooks can create them without any fuss, all you’ll need to think about is choosing the wines to go with them. Vegetarian Gado Gado (serves 4) ‘You had me at peanut sauce’ an Indonesian inspired vegetable salad platter that presents perfectly as a lunch for two or as part of our late summer feasting menu on the shared table. This will have you sloshing that peanut sauce on everything; lucky it makes plenty. To make this a completely vegan dish omit the boiled eggs and substitute with boiled slices of potato. Ingredients

20 green beans, steamed or stir fried 2 hard boiled eggs, peeled and cut in half 1/2 cup bean shoots 3 radishes, thinly sliced 2 carrots, julienned 1 bunch of broccolini, steamed or stir fried 1 cup cooked corn kernels 250g of tempeh sliced and pan fried Cup of baby spinach leaves or lettuce leaves 1 sml Lebanese cucumber, halved lengthways and then cut in 1cm pieces Peanut sauce 1/2 cup peanut butter 4 tbsp soy sauce or tamari 1 tbsp maple syrup Juice of one fresh lime 1/4 chopped fresh red chilli 1/2 cup coconut cream Method

To make peanut sauce, add ingredients to a saucepan and cook until it just comes to the boil. It should be slightly runny like a thick gravy (you can add a little water if it is too thick). Pour into a container and allow to cool.

*Jo’s Tip*

For a non-alcoholic version use sparkling water and add some extra juice if desired.

Assemble all ingredients on a large platter. Place the peanut sauce in a small bowl and serve in the middle of the platter with a spoon. *Optional* scatter with extra roasted peanuts and fresh coriander and slices of fresh red chilli.

Mango and Pineapple Prosecco Punch Ingredients

2 cups mango juice 2 cups fresh pineapple juice 1 cup white rum 1 bottle chilled Prosecco

Method

1. Grab a big jug. 2. Mix together 2 cups of mango juice and 2 cups of pineapple juice. 3. Add 1 cup of white rum or more to taste (optional). Just before serving top up with a bottle of chilled Prosecco. 4. Add some ice, fresh mint sprigs and fresh pineapple to serve. eat.live.escape

1. Mix all of the marinade ingredients together until well combined. 2. Add 3/4 of the marinade to a roasting dish, add chicken and marinate in fridge for up to 1 day before cooking. 3. When ready to cook, pour most of the remaining marinade over the chicken. Add the orange juice and lemongrass. 4. Bake in oven at 180C (350F) degrees for an hour and a half, rotating the dish until the chicken is nicely golden and cooked through. 5. Remove from oven and rest for half an hour. Prior to serving, pour over the extra marinade that you reserved. 6. Serve with a flat rice noodle salad (see opposite page) or steamed basmati rice.

If you don’t have time to cook Chicken Marylands, simply shred a shop brought BBQ chicken and toss though rice noodles for a quick chicken noodle salad.

Quick Rice Noodle Salad Ingredients

500g flat rice stick noodles, cooked in boiling salted water, and drained. 2 cups fresh bean shoots

Ingredients 3 cups self-raising flour 1 cup thickened cream 1 cup of lemonade

Dressing 1/2 cup fresh coriander chopped 1/4 fresh chilli chopped 1 cup roasted peanuts roughly chopped 1/4 cup peanut oil or light olive oil 1 tsp castor sugar or palm sugar Juice of 1 lime

Method

1. Mix all dressing ingredients together. 2. Pour dressing over cold noodles. 3. Add 2 cups of fresh bean shoots and extra coriander if desired. 4. Gently toss through. This salad can be made ahead. I often cook the noodles earlier and pop into the fridge. I add in the dressing and sprouts when I’m about to serve.

Grilled Prawns with Zesty Asian Dressing Ingredients

1 kg raw prawns, shells on Zesty Asian Dressing 1 grated or finely chopped thumb size piece of ginger 1/2 red chilli thinly sliced 1 clove garlic, crushed Juice of 1 fresh lime 1/4 cup of peanut oil or light olive oil Handful of fresh coriander, chopped 1 tsp sesame oil 1 tbsp fish sauce 1 tsp castor sugar or palm sugar 3 thin sliced kaffir lime leaves Method

Mix together dressing ingredients. Pour half over the prawns and reserve the remainder to serve in a bowl with the cooked prawns. Grill the prawns until they change colour on a hot BBQ, turning once or twice until cooked through. Serve on a big platter piled high with lime wedges and dressing on the side. Don’t forget a finger bowl for hands if you're serving the prawns whole.

A Note About P rawns ‘I’ll slip an extra shrimp on the barbie for ya” became a catch phrase in Australia when the saying was featured in a commercial for Australian tourism targeted at American tourists. They are a crowd favourite in Australia and perfect for a summer feast with this zesty dressing to pour over or dunk into. We always recommend asking your fishmonger where your prawns are sourced from, sustainable and ethically sourced prawns are always best.

eat Easy Strawberry Ice Cream This is an 'easy peasy' delicious ice cream that requires no special ice cream churns, just a mixer to whip your cream to soft peaks. Make use of the fresh summer seasonal strawberries or use frozen berries. Only a few ingredients but wow, it is super good and can keep in a sealed container for a week. Ingredients 500g of strawberries, fresh or frozen 2 tbsp sugar 1 can of condensed milk (395g) 2 1/2 cups thickened cream 1 tbsp water (only required if using fresh strawberries) Method 1. Cook the strawberries and the sugar in a saucepan on low heat until a jam like consistency is achieved (it will take approx. 15 -20 minutes). If using fresh strawberries you might need to add the water now. Once cooked allow to cool. 2. In a large bowl whip thickened cream until you have stiff peaks. 3. Add in strawberry mix and keep whipping until it is thick again. 4. Fold through the can of condensed milk using a spatula and then transfer to a freezer proff container. 5. Allow to fully freeze. 6. Once frozen, the ice can be scooped into cones or used for an ice cream sandwiches or to serve alongside our summer berry tart.

Summer Berry Tart What’s better than showcasing fresh seasonal berries for dessert? Here a creme patissiere filling sits on top of a shortbread crust ​and you can pile with fresh berries on top. The crust is easy and can be pre-baked the day before and kept in an airtight container. The creme pâtissiere can be made up to three days ahead - just give it a quick whip before spreading over the tart base and topping with your berry selection. Tart base 1 cup plain flour 113 grams salted butter 1/4 cup icing sugar 1/2 teaspoon of vanilla essence To make, melt the salted butter and pour over the flour and sugar and mix well. This is a no rest, no refrigerate and no blind bake tart base. Press it in to a 20cm tart tin with a removable base, pressing evenly and up the sides and bake immediately at 175C degrees for approx. 20 minutes until golden brown.

Creme Patissiere 3 egg yolks 30g cornflour 1/3 cup caster sugar 1 tsp vanilla essence (or fresh vanilla bean pod) 2 cups full cream milk In a bowl mix egg yolks, cornflour, caster sugar and vanilla. In a saucepan heat the milk to almost boiling and then pour it in to the egg mix whisking quickly. Pour all ingredients back in to the saucepan and whisk over heat until it starts to boil and thickens up. Remove from heat and place in a bowl covering with cling wrap pressed to touch the mix so no skin can form as it cools. Refrigerate until needed Whip up just prior to filling tart and top with berries as desired. Refrigerate until ready to serve.

The Ultimate Praline Tart

Start this recipe a day ahead. This decadent tart is based on a classic flavour trio, chocolate, caramel and peanuts. I’ve elevated the flavours and added a touch of coffee and hazelnuts, as well as some roasted flavours, too. With a little bit of technique and care, you can turn a simple tart into something stunning, that’s what finesse is all about.

Ingredients

Roasted milk chocolate ganache 280 g (10 oz) milk chocolate 1 gelatine sheet (titanium grade) 140 ml (4½ fl oz) full-cream milk 200 ml (7 fl oz) thickened (whipping) cream

Method Preheat the oven to 150°C (300°F). Line a baking tray with baking paper and spread the chocolate on the tray. Roast for

15 minutes or until the cocoa butter has split from the chocolate and the chocolate looks dry. Meanwhile, soak the gelatine in cold water to soften. Pour the milk and cream into a saucepan and bring to the boil. Remove from the heat, add the roasted chocolate and use an immersion blender to blend until melted and smooth. Squeeze the excess water from the softened gelatine, add it to the pan and stir until dissolved and well combined. Transfer the ganache to a container and refrigerate for a few hours, preferably overnight, until set. cont. page 41

Brownie (Serves 6) I think everyone should have a good brownie recipe in their repertoire. Brownies are pretty easy to make, but easy doesn’t mean boring, there’s nothing boring about an epic brownie! And let me point out that brownies don’t have to be made with ‘evil’ processed white sugar. I’ve used muscovado sugar here because I love the flavour profile and it also reduces the sweetness. But it’s not about health, after all, it’s a brownie we’re talking about! You can have fun with this recipe and substitute ingredients, use palm sugar or brown sugar and try different blends of good-quality couverture chocolate, which is the key to an amazing brownie. Or replace the plain flour with coconut flour or another gluten-free alternative. Add some spices or even brown the butter before mixing it with the chocolate.

Ingredients

Oil spray, for greasing 270 g (9½ oz) 60% dark chocolate 250 g (9 oz) unsalted butter 240 g (8½ oz) muscovado sugar 2 pinches of salt 4 eggs 60 g (2¼ oz) plain (all-purpose) flour 80 g (2¾ oz) dark cocoa powder 1 teaspoon baking powder 50 g (1¾ oz) roasted hazelnuts, coarsely chopped 50 g (1¾ oz) slivered pistachios

Method

Preheat the oven to 170°C (340°F). Line a 15 x 30 cm (6 x 12 inch) cake tin with baking paper and spray with oil. Combine the chocolate, butter, muscovado sugar and salt in a heatproof bowl over a saucepan of simmering water and stir occasionally until melted. Remove from the heat and whisk in the eggs. Sift the flour, cocoa and baking powder onto the chocolate mixture and fold until a batter is formed. Fold half of the hazelnuts and pistachios into the batter. Spoon the batter into the tin and smooth the top. Scatter the remaining hazelnuts and pistachios over the batter in an even layer. Bake the brownie for 15–20 minutes. The centre will still be quite soft but will set once it cools (the brownie should be moist and fudgy, if it’s too crumbly, it has been overcooked). Remove from the oven and set aside to cool to room temperature. Remove the brownie from the tin and cut it into slices. Serve it to your loved ones or love yourself and dig in! The brownie is best when warmed a little in the microwave and served with a scoop of your favourite ice cream. eat.live.escape

The Best Basic Butter Bake (Serves 5) These are the easiest cakes I’ve ever made. They’re also mega tasty and so versatile, and you can flavour them in many ways. Try adding a teaspoon of ground cinnamon along with the flour, or top the batter with just one or various fruits, which will also form a garnish. Make fig butter cakes by arranging sliced figs on top of the batter, or fold some crushed frozen raspberries through the batter for raspberry butter cakes, get creative! I recommend enjoying these butter cakes while they’re still slightly warm, with a hot cup of tea. Ingredients 250 g (9 oz) unsalted butter, so.tened 210 g (7½ oz) caster (superfine) sugar 200 g (7 oz) self-raising flour 2 pinches of fine salt 3 eggs 185 ml (6 fl oz) full-cream milk Grated zest and juice of ½ lemon 20 g (¾ oz) honey, plus 50 g (1¾ oz) for brushing 20 ml (¾ fl oz) extra virgin olive oil Fruit of your choice (see Notes below) Method Preheat the oven to 180°C (350°F). Line five 10 cm (4 inch) spring-form cake tins with baking paper. Put the butter and sugar in an electric mixer fitted with the whisk attachment. Whisk on medium– high speed until fluffy, about 5–8 minutes. Meanwhile, sift the flour and salt together. Once the butter mixture is fluffy, add the eggs, one at a time, and whisk until combined. Add the milk, lemon zest, lemon juice, honey and olive oil and whisk until completely incorporated. Add the sifted flour and slowly whisk until a batter is formed. Spoon 190 g (6¾ oz) of the batter into each cake tin. Arrange thin slices or pieces of fruit on top. Bake the cakes for 35–40 minutes or until a skewer inserted into the centre of each one comes out clean. Warm the honey in the microwave for 10–20 seconds to loosen it. Drizzle each hot cake with some of the honey and use a pastry brush to brush it over the top of the cake. Allow the cakes to cool a little before removing them from the tins and brushing them with more honey. Notes: Try using thinly sliced or chopped apples, oranges, figs or berries on top of the cakes. Ensure the fruit isn’t too bulky or it will sink into the batter. You can also cook the batter in one large cake tin. Increase the cooking time by about 15–30 minutes, depending on the size of the tin.

The Ultimate Praline Tart cont. Coffee tart shell 375 g (13 oz) plain (all-purpose) flour, plus extra for dusting 80 g (2¾ oz) white (granulated) sugar 200 g (7 oz) chilled unsalted butter, cubed 10 g (¼ oz) ground coffee beans 5 g (⅛ oz) freeze-dried coffee granules 1 egg 1 egg yolk 100 g (3½ oz) dark chocolate Method Preheat the oven to 170°C (340°F). Place a 20 x 2 cm (6 x ¾ inch) perforated tart ring on a baking tray lined with baking paper. Combine the flour, sugar, butter and coffee in a mixer fitted with the paddle attachment. Mix until a sandy texture is formed. Slowly add the egg and egg yolk and mix until a dough is formed. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Roll out the chilled dough on a lightly floured surface to a thickness of 2 mm (1⁄16 inch). Drape the dough over the tart ring and tuck in the edges, cutting off the excess. Prick the centre of the tart shell with a skewer a few times. Line the shell with baking paper and fill with baking beads or uncooked rice. Blind bake the shell for 15 minutes. Remove the paper and beads or rice and bake for a further 15 minutes or until golden. Set aside to cool. Melt the chocolate in a heatproof bowl in the microwave or over a saucepan of simmering water. Coat the inside of the tart shell with the melted chocolate and allow it to set. Crème pâtissière 500 ml (17 fl oz) full-cream milk 4 egg yolks 110 g (3¾ oz) caster (superfine) sugar 40 g (1½ oz) cornflour (cornstarch) Method Pour the milk into a saucepan and bring it to a simmer. Meanwhile, whisk the egg yolks and sugar until fluffy, then stir in the cornflour until the mixture is well combined and forms a paste-like consistency. Whisk the hot milk into the egg yolk mixture, then pour the mixture back into the pan and whisk over medium heat until it has thickened to a very firm custard-like consistency. Immediately use the hot crème pâtissière to make the peanut butter diplomat cream (see below). Peanut butter diplomat cream 1 gelatine sheet (titanium grade) 1 quantity crème pâtissière (see above) 175 g (6 oz) smooth peanut butter 250 ml (9 fl oz) thickened (whipping) cream Soak the gelatine in cold water to soften. Pour the hot crème pâtissière into a jug. Squeeze the excess water from the softened gelatine and add it to the jug, along with the peanut butter. Using an immersion blender, blend until the mixture is completely smooth. Transfer the mixture to a bowl and refrigerate for 30–45 minutes or until cool. Whisk the cream until medium peaks form, then fold it through the crème pâtissière mixture. Place in the fridge until needed. Peanut & hazelnut praline paste 150 g (5½ oz) unsalted peanuts 150 g (5½ oz) blanched hazelnuts 200 g (7 oz) caster (superfine) sugar Method Preheat the oven to 170°C (340°F). Line a large baking tray with baking paper. Spread the peanuts and hazelnuts over another baking tray and roast for 10–15 minutes or until golden. Meanwhile, put the sugar in a saucepan and give the pan a shake to spread it in an even layer. Place the pan over medium–low heat. Once the sugar starts to caramelise around the edges, use a spatula to bring the caramel and melted sugar to the middle of the pan. Gently stir the caramel every so often to make sure the sugar lumps dissolve. Once the caramel is completely smooth and all the sugar has caramelised, cook until it turns a dark amber. Remove the pan from the heat. Stir the nuts into the caramel, then pour the mixture onto the lined tray and set aside until completely cooled. Break the nut mixture into small pieces and place it in a high-speed blender. Blend until the mixture forms a wet, oily paste – it should take about 4–5 minutes. Once the mixture is smooth, transfer it to an airtight container and store at room temperature until needed. Assembly Dark cocoa powder, for dusting Roasted hazelnuts, to garnish Roasted peanut halves, to garnish Use the back of a spoon to spread the peanut and hazelnut praline paste in the tart shell in a 5 mm (¼ inch) thick layer (see below). Place in the fridge to set for 10 minutes. Transfer the peanut butter diplomat cream to a piping bag. Pipe a 1 cm (½ inch) layer of the diplomat cream on top of the praline, leaving a 5 mm (¼ inch) gap from the top of the tart shell. Transfer the roasted milk chocolate ganache to a piping bag fitted with a large petal piping tip (no. 104). Starting at the edge of the tart, pipe the ganache in a random left-to-right motion without stopping until the top of the tart is covered, as shown. Place the tart in the fridge for 10–15 minutes or until ready to serve. Lightly dust the tart with cocoa powder just before serving and garnish with the hazelnuts and peanuts.

SUSTAINABLE FIJI There has been a considerable growth in sustainable food and beverage practices at hotels and resorts across Fiji. Practices such as on-site farms and herb gardens, using local fisherman, and developing their own products like craft beers, pasta, and cheeses is growing in popularity. actus plants are having a moment with these prickly plants popping up all over Instagram and in gardens across the globe. Near the small town of Strathmerton in Victoria’s north (just under three hours from Melbourne) you can find the largest cactus farm in the country, Cactus Country. Owner Jim Halls’ passion for cacti began as a child, and after taking over his father’s vast cacti collection with his wife Julie they set about to grow this special collection. In the subsequent years they acquired another collection of cacti from Mr. Ed Kroemer, who had travelled the world sourcing cacti plants. A new season is a chance to revamp your makeup staples and experiment with trends that can add a little spice to your everyday look. This summer it’s all about pastel eyes, glossy lips and faux freckles. Add these three trends to your makeup routine for a fresh and flirty look.

Pastel Eyes A makeup trend that is a staple for the summer months is pastel eyeshadow. Opting for pastel tones is a fantastic way of easing yourself into the world of coloured eyeshadow as wearing bright colours on the eyes can sometimes feel intimidating. Pastel tones give the most beautiful wash of pigment to the eyes without feeling over the top. Lavender or lilac tones are a great place to start. Purple shades are such a flattering tone on all eye colours and skin tones and provide such a modern and chic eye look. Vipassana is a famous meditation retreat available all around the world where participants spend up to 10 hours a day meditating for 10 days while practising silence. Not for the faint-hearted but you can be sure that if you spend that much time in meditation you will gain some insights into the way your mind operates and learn a thing or two about meditating. There are of course many meditation retreats that will allow you to dive deep into meditation without the gruelling 10 hours a day of meditation. Your local Buddhist centres will often offer retreats and can be a good place to start.

Exercise retreat For fitness lovers, an exercise retreat might be exactly what you need to kick your body into gear. Exercise retreats are perfect for those looking to get extra fit, lose weight or train for sporting competitions. hen the weather warms up there is nothing more enjoyable than sharing a meal outside with family and friends. This time of the year is perfect to enjoy a relaxed lunch or dinner al fresco. Dress the table

It always feels a little extra special when the table is dressed with fresh linens and cloth napkins. Add some glamour with gold cutlery, cut flowers and crystal glassware. Keep it simple

If you are eating outside, as the host you don’t want to be in and out to the kitchen all day or evening. Make a delicious salad, grill a whole fish or some chicken fillets with fresh herbs and lemon and serve alongside home baked (or store-bought) sourdough bread. One of our favourite easy recipes is our Tomato & Thyme Salad. Halve golden cherry tomatoes (red will also work), drizzle with olive oil and a tablespoon of white balsamic vinegar, crumble in soft feta, sprinkle with fresh thyme leaves and season with salt and pepper. Blend in to the surroundings

Eating lunch under a wisteria vine? Why not theme the table settings with the same colour palate as your surroundings, whether it is all white in a white flower garden, slate greys and cool tones on an industrial style balcony or greens and neutrals in a country back garden. Scent the air

Just because you are eating outdoors doesn’t mean you can’t add your own hint of scent. Try beautiful scented candles to add a little luxury to your space.

Sunflower

Sunflowers are such a happy flower, with their large round faces seeking out the sunshine they are a welcome sight after a long, cold winter. Sunflowers produce up to 1000 to 2000 seeds per flower which are packed with goodness. Between January and March in Australia you can visit a pick your own sunflower patch and enjoy wandering through the golden field of flowers. We love the sunflower field at Dunnstown in Victoria. Tessa Carroll is on a mission to bring sustainable alternatives to the world of fashion through her accessories brand, A_C. We catch up with her and find out more. Tell us about A_C and your journey creating the label A_C Official is a Melbourne-based accessories brand producing timeless modern classics with innovative plantbased leathers. The journey from concept to construction has been a long and challenging one but that can be expected since there has been no one ahead of us to carve the path. We launched this brand to serve the market who recognises the need to safeguard our future, buying sustainably and avoiding environmentally damaging textiles such as animal and plastic leathers. This means we operate somewhere amongst the textile innovation and technological innovation space, disrupting the industry one handbag at a time. The path to production is exciting and incredibly rewarding. It provides purpose to product and I really feel like we are making a difference in the retail industry by mitigating climate change through the raw materials we produce with. What is the ethos behind the brand? To put it simply our intention is to create a bag that can return to Earth the same way it came. I believe it is not just the consumer’s

responsibility to purchase consciously, but in fact the designer’s responsibility to produce carefully. It is no longer enough to avoid causing damage to the Earth, we need to be actively trying to reverse it. Every item we produce is carefully thought through from pre-production to it’s end of life plan. If it is not biodegradable, we ensure it is 100% recyclable. We are a proudly vegan brand and the A in our brand stands for Ahimsa. This is of Sanskrit origins, meaning ’no harm’. We apply this to the treatment of animals, people and planet. The C in our name refers to the Collective; this is not a movement exclusive to us. It requires the sum of all people to make changes to their everyday lives. A_C is very focused on ethically and sustainably produced products, which is refreshing to see in the accessories industry, tell us about your products and what makes them so unique. Since inception we have worked in the Textile Innovation space, first to market to offer handbags made from plant based fibres such as pineapple leaves and cactus proteins. Despite this, we set out to produce fashionable, timeless pieces that are as durable as they are seasonless. There is little point in designing fast fashion styles

which need to be replaced once the trend is over, in fact, that is quite the opposite of producing sustainability What does a day in your life look like? I start my day with either a yoga session, a walk or a swim. I like to be up before dawn and be at my desk by 7am - that’s my competitive nature! My day and schedule varies as I work with suppliers and consultants all over the world and their timezones need to be accounted for. Some days I can start at 7am and finish at 7pm as the UK are just starting their day! I usually meditate around 1pm instead of getting a second coffee - I find it really helps me to find focus. Lastly, what’s next on the horizon for A_C? We have just released the first collection made of Silica Sand. It is 100% recyclable and backed in recycled cotton. Did you know? Summer is the best time to see butterflies in the garden after they have emerged from their cocoons in the springtime. If the weather is too hot, butterflies will seek shade from the summer sun under leaves and shady plants in the garden. Each autumn, millions of Monarch butterflies leave their summer grounds and head to warmer winter breeding grounds.

If you are lucky to be living in a tropical climate growing a tropical garden full of lush green plants and exquisitely scented blooms will be a breeze, in other climates creating micro-climates within the garden can allow you to grow some of these beauties.

Frangipani Nothing says the tropics like the scent of frangipani flowers in the garden. Frangipani trees grow best in well-drained soil, in full sun positions and in areas free from frost and cold temperatures. Frangipanis should only need watering during spring and summer months. They are fairly slow growing but will grow into a large sized tree so choose your position in the garden wisely.

Passion Flower

Choose a full sun, sheltered position for passion flowers away from dry or strong winds. Ideally plant alongside a trellis or fence as passion flowers love to climb. A well-draining soil is ideal and fertilise once or twice a year to keep the vines looking their best. After flowering give your passion flowers a light trim. If you live in a cold climate you can grow passion flower indoors in a large pot by a window with bright light. Once the last frost has past, move the vine back outdoors until the cold weather arrives again

Hibiscus While hibiscus will

grow best in tropical and warm weather climate, there are deciduous varieties that will also grow in cold climates. Protect hibiscus from strong winds, choose a sunny position and water, mulch and feed regularly during growing periods to ensure you are rewarded with big, showy blooms.

Garden Maintenance Mulch Keeping plants cool and protected from the hot summer sun is one of the best things you can do for your garden, adding a layer of mulch will keep plants roots happier and prevent excess moisture loss. Layer with about 2-3 inches of organic matter. Weed Weeds love to get a hold in the garden in the warmer month, seemingly doubling their size overnight! Pull weeds out when they are young and small, once they have become established it will take more time and effort to get them under control. Prune Keep plants in top condition by lightly pruning any dead heads and brown or withered leaves. A light summer prune will keep many plants, particularly roses, looking their best through until autumn.

Ginger Growing your own ginger

Sweet scented jasmine is a joy in any garden and while there are varieties that can be grown in a number of different areas it really thrives in warm, tropical and sub-tropical climates. Protecting your jasmine from cold, harsh temperatures is key so choose a sheltered warm position with plenty of sunshine. Jasmine is best grown on a trellis or fence where it can grow to its heart’s content, filling the garden with the scent of its intoxicating white blooms

Water The most optimal time to water the garden is in the early morning before the sun is at its peak. Always water the base your plants, not the leaves, fruit or foliage as this will make them more vulnerable to disease and mildew. Watering in the late afternoon is the next best time. Try not to water at time as the leaves may not dry out over night. Shade You may need to move potted plants into a shady position in very hot summer weather as they can dry out easily in the heat of the day. When you are planning your garden consider adding shady sections with hardy trees and shrubs that will act as protection for more vulnerable plants.

From The Kitchen Garden

tomato The tomato is one of the kitchen’s most versatlie fruits. From salads to pasta sauce and everything in-between, tomatoes are a kitchen staple that every home cook should have on hand. Growing your own tomatoes will ensure you have the juciest and most flavour packed fruit and, if you grow enough, you will be able to make sauces and chutneys to freeze and use in the kitchen all year around.

Location, Location, Location

Tomatoes grow best in full sun, try to position your tomato plants in a location that has up to 8 hours of sunshine each day. If you are growing tomatoes plants in a garden bed they will need staking as they continue to grow. Cherry tomatoes grown in hanging pots will need room to tumble down the sides of the pots.

Timing

Tomatoes like warm, sunny conditions so if you are in a cold climate region wait until well after the last frost in spring to plant your tomato bushes. In warmer climates you may be lucky enough to grow tomatoes all year around. If you are planting multiple tomato plants, try planting one each week so you will have a continual harvest of fruit over the summer months and into early autumn.

Water and Nutrition

Tomatoes will get thirsty during the summer months so make sure you water regularly. Tomatoes planted in pots will dry out more quickly, so make sure they are being watered well every few days. Fertilise in the early growing stage with a non-toxic, natural fertiliser.

P runing and Harvest

Tomatoes typically take between 10-14 weeks to be ready for harvest. Pick tomatoes when the fruit has ripened to a glorious juicy red, but before they fall from the vines. If you allow tomatoes to stay on the vine for too long once they are ripe you may find that you are sharing your tomato fruit with some unwanted pests.

Companion P lanting

Garlic, onions and chives are great companion plants for tomatoes and will help to keep pesky critters away from your ripe fruit. Basil is also an excellent companion herb for tomatoes and makes a perfect compantion to tomatoes in the kitchen too.

RoastedHeriloom Tomato and Goat's Curd Toasts Ingredients

2 slices of sourdough bread 2 small bunches of vine tomatoes 2 heirloom tomatoes 2 tbsp of soft ricotta cheese 40g goat’s curd, crumbled 2 tbsp olive oil 8 sprigs of thyme leaves Salt & pepper

Method

1. Pre-heat oven to 180C (350F). 2. Place tomatoes on a sheet of baking paper on a tray and drizzle with olive oil, scatter with 4 sprigs of thyme and season with salt and pepper. 3. Roast in oven for 10 minutes until the tomatoes have blistered. Remove from oven and allow to cool slightly. 4. Toast sourdough slices and spread with ricotta cheese, add crumbled goat’s curd evenly between the toasts and top with roasted tomatoes. 5. Serve drizzled with a little extra olive oil, remaining thyme sprigs and cracked pepper. Enjoy!

igh up on a mountainside in Victoria's north lies a magical garden that is a garden lovers delight. Set across 14 acres of a private estate, Forest Glade Gardens and themed in four distinct gardens, the Japanese garden, a cool fern gully, the English garden and a woodland area. The cool climate location of Mount Macedon is the perfect backdrop for a wide range of native and exotic plant species that thrive in the mountain air. There are many statues, fountains and walkways dotted throughout the gardens and each season brings it sown unique display of colour. The region is well known for its impressive open gardens so make a day of it and visit more than one garden.

The Forest Glade Gardens are in Mount Macedon in Victoria, about 50 minutes (64km) north of Melbourne.

When to Visit

This is a beauutiful garden at any times of the year, in winter you may be lucky to get a rare snow day, in spring the laburnum and wisteria tunnels will be in display, alongside daffodil fields and bluebells. In autumn the changing of the leaves in the gardens (as well as the surrounding areas) are magnificent. Summer brings a riot of colour and a cool oasis from the hot summer heat. Try a weekday as some weekends do get very busy.

WHERE IN THE W ORLD IS ELLA? Food Editor Ella, travels the world in search of the delicious food experiences.

U

p and down like a yoyo this year, my travel plans have been thrown into disarray more times than I care to admit. But fianlly, dear readers we are almost at the end of 2021 and I see a glimmer of hope on the horizon. The promise of border openings and the chance to visit some of my favourite places have been dangled before me and my 2022 calendar is set to explode with people to visit, places to go and of course food to eat! First up I plan to head to Singapore, the small island nation that packs a seriously glamorous foodie punch for its size. I’ll stay at the Fullerton Hotel with its views across the harbour and watch the boats cruise the gentle waters while sipping on a cocktail by the pool. Iconic Raffles will be on my itinerary with its historic Singapore Sling at the Long Bar and bags of peanuts which I will shell on the floor as tradition dictates, while take in the glamour of the surroundings. After an inspiring walk through the Gardens by the Bay, I will head to haker

market Makansutra Gluttons Bay and eat the famous Carrot Cake (not what you think!), this delectable mix of white radish and eggs is a must on my foodie list. I’ll follow up with Chilli Crab and the traditional Hainanese Chicken, which I plan to eat more than once on my trip.
