A

nyone who knows me well knows that I am rarely arm’s length away from a bar of chocolate, in my office, in the car, in my bag - if you ever need some I’m your girl! And while I have a few go-to favourties, Haigh’s Chocolate speckles, Koko Black’s heart pops, Venchi’s Gianduja, I’m really not all that fussy, as long as it is full of sweet chocolate-y goodness I am sold. I am also a cool weather lover, when the nights close in and the cold weather arrives any excuse to snuggle up in front of an open fire with a glass of wine and some serious comfort food fills my heart with joy. So putting this issue together really was a sweet dream come true!

The city in the wintertime is one of my favourite places, I love seeking out dimly lit cosy cafes, where you can curl up with a mug of hot chocolate and a good book. A Sweet S tart Cherry Chocolate Bark Chocolate bark is very simple to make and uses minimal ingredients. There are so many toppings you can try, but this is one of our favourites, sweet cherry, coconut and dark chocolate make a delicious combination.

Ingredients 200 gram block of good quality dark chocolate 1 Cherry Ripe bar*

Method Melt chocolate in a metal bowl over a saucepan of simmering water. Once fully melted spoon the chocolate on to a sheet of baking paper on a flat tray and use a spatula to spread out the chocolate until the bark is about half a centimetre thick. While the chocolate is still soft top with chopped Cherry Ripe bar. Place in fridge for 1-2 hours until the chocolate is fully set. Once set, chop in to 3 x 3 inch pieces. Enjoy! *Cherry Ripe bars are Australia’s oldest chocolate bar, they are a delicious mix of cherry and coconut smothered in dark chocolate. They can be purchased in supermarkets and online however if you can’t get a hold of one you can use dried cherries and coconut flakes which will also work great for this recipe.

Spaghetti with Slow Cooked Octopus and Gremolata By Chef Martino Pulito, Cucina Porto Executive Chef Ingredients (Serves 4) 200g Octopus 40ml olive oil 5g Thyme 5g garlic (about 3 cloves) 2 bay leaves 1 litre canned tomatoes 80g red onion 40ml white wine 50g cherry tomato 400g spaghetti Gremolata - 10g (parsley, lemon and chill, chopped)

Method 1. Pour olive oil in to a pan and caramelise the octopus (3 mins), or until it starts to change colour (it will be a little bit red in colour). 2. Add the onion, garlic, thyme and bay leaves and stir. 3. Add in the wine and canned tomatoes. 4. Let the sauce simmer for a minimum of 2 hours on a low heat, stirring every ten minutes. The sauce will be ready when the liquid is reduced by half. 6. When the sauce is ready, season with salt and pepper. 7. Cook the pasta (minus a couple of minutes, according to the packet instructions). 8. Toss the pasta with the sauce. 9. Add cherry tomatoes into the pan. 10. Plate the pasta and drizzle with olive oil. 11. Add the gremolata on top of the pasta dish and serve with optional extra chilli. Cucina Porto at The Star Pyrmont, Sydney star.com.au

eat Lamb Sfeeha (Middel Eastern Lamb Pie), Barberries and Garlic Yoghurt By Chef Adam Wolfers, Gerard’s Bistro Ingredients (Makes 5)

Method

Dough Bakers flour/00 flour 250g Kamut flour 50g Sourdough starter 50g or 1g dry yeast Olive oil 1 Tbsp Water 150ml Salt 6g

Dough 1. In a bread mixer, place sourdough starter (if you don’t have sourdough starter you can use dry yeast) with water and dissolve. 2. Add the salt, both flours and work for 10 mins on high speed. Place in a greased bowl and cover with plastic wrap. 3. Leave out at room temperature for 1 hour, place onto bench and work the dough till it is silky and smooth (about 3-5 mins). 4. Place back into greased bowl and cover for another 1 hour at room temperature. 5. Place on the bench and roll into 80g balls. 6. Rest for another 30 mins covered with a damp towel. Set aside.

Sfeeha filling Lamb shoulder meat 500g (or ½ lamb shulder) Garlic 2 cloves chopped Chilli powder ¼ tsp Cumin ½ tsp Coriander powder ½ tsp Cloves 2 Cinnamon powder madras ¼ tsp Smoked paprika ½ tsp Sweet paprika1/2 tsp All spice ¼ tsp Salt 10g Olive oil 200g Water 200ml Biber salçasi Red capsicum 1 seeds removed, roughly chopped Salt 3g Veg oil 25g Garlic yoghurt Garlic whole 4 Vegetable oil 400g Plain Greek yoghurt 300g Lemon juice 25ml Salt 6g Assembling Fior de latte 200g Barberriescurrants Coriander 1/2 bunch, picked leaves Parsley 1/2 bunch, picked Mint 1/2 bunch, picked Za’atar 2 tbsp

Lamb mix 1. Set the oven to 160 degrees. 2. Toast all the spices together until aromatic. 3. Blend your spice mix to form a powder. Place into a bowl with the garlic, olive oil and salt. Using clean hands rub the spice mix all over the lamb. 4. In a shallow baking dish, add the water, place the marinated lamb on top of the water. Cover with foil, making sure it is air tight. 5. Place the lamb into the oven for approx. 2 -3 hrs (or until the lamb is tender and pulls apart). 6. Set aside and cool down. Biber Salçasi 1. Preheat oven to 200 degrees. 2. In a robo coup (or food processor), pulse the capsicum with vegetable oil and salt (approx for 3 minutes). 3. Place in the oven for 15 mins or until it is caramelised on the top of the mix. Set aside and leave it to cool down. Garlic yoghurt 1. Cut the garlic in half to expose the garlic pieces. 2. On a low setting heat the oil with a small pot. Add the garlic and leave on low heat for 1 30 minutes to infuse. Once infused reserve oil for later. 3. Take the garlic out of the skin and press through a fine sieve. 4. Whisk the garlic paste through the yoghurt, add the lemon juice and salt. Set aside for plating. Assembling the Sfeeha 1. Set oven to 220C degrees. 2. Tear some baking paper (about 20cm) and brush some olive oil. Between 2 sheets of baking paper, place the dough ball in the middle. Place the other baking sheet on top. Using a rolling pin, roll the dough. (about 2-3mm thick) 3. Repeat with all the dough and set aside. 4. Take one side of the baking paper off and add 1 tablespoon of the biber salçasi on the base of the dough. 5. Add 2 heaped spoons of lamb mix in the middle of the dough. 6. Sprinkle 1 tsp of barberries and tear 4 small pieces of fior de latte. 7. Roll one side of the dough and stick to the other side, so the shape is a half moon. Pinch along the exposed edge of the dough forming a dumpling. (make sure it is well sealed) 8. Once you have filled all your sfeeha’s, place on a baking tray (make sure it’s still sitting on the baking paper). Place in the oven for 10-15 mins, or until your sfeeha is crisp and golden brown. 9. For serving, brush the cooked sfeeha with some garlic oil. Sprinkle some za’atar, and serve the garlic yoghurt and the herb salad on the side. Chicken Soup with Pan Fried Chicken Breast and Dill Oil, Chef Rotem Papo, Golda It is widely known that chicken soup is one of the most comforting foods on the planet, and often call “Jewish penicillin”. Picture a rainy day when you were a child, walking home from school without an umbrella. You arrive home soaking wet and miserable but then the intoxicating smell of your mom’s chicken soup hits you straight away and suddenly all your worries are gone. My updated version is influenced by my time living in Melbourne where we are lucky to have so much incredible Asian food. My broth uses a few Asian ingredients to enrich the flavour and add a little bit of extra healing power. Ingredients 4x boneless chicken thighs (skin on) 2x chicken breast (skin on) 2x brown onions, roughly chopped 2x waxy potatoes (ie. Nicola) 3x carrots 6x sticks of celery 1x bunch dill 25g ginger, peeled and sliced 20g fresh turmeric, peeled and sliced (or 2tsp turmeric powder) 1tsp black peppercorns 2tbsp light soy sauce 2tbsp lemon juice 100mL vegetable oil 2L cold water Method Chicken broth 1. Place the chicken thighs, onion, 2 carrots (roughly chopped), 4 sticks of celery (roughly chopped), stalks from the dill (the fine leaves will be used for the dill oil and to garnish), ginger, turmeric and black peppercorns in a large pot and cover with 2L cold water. Bring to the boil. 2. As soon as it begins to boil, turn down to a simmer, cover and cook on a very low heat for 1 hour, periodically skimming the excess fat from the surface whilst it’s simmering. 3. Strain the stock through a fine strainer into a pot and leave the meat and veg to cool slightly. 4. Pick the meat from the thighs and set aside, discarding the skin and all other strained elements. 5. Season the stock with soy sauce, salt and pepper to taste. Dill oil 6. Keep some dill leaves aside for garnish and blitz the rest with the vegetable oil until pulverised and bright green. Strain through a fine strainer lined with muslin cloth. Pan fried chicken breast 7. Season the chicken breasts with a pinch of salt and pepper. 8. Place a frying pan on a medium heat. Add a small amount of vegetable oil and sear the chicken breasts (skin side first) until golden. Turn them over and sear the other side until golden and the breast is cooked, this should take between 12-15 minutes. 9. Allow chicken to rest. Assembly 10. Cut the remaining carrot and celery into batons (little stricks). 11. Bring the stock to a simmer and add carrot batons, celery batons and diced potato. Cook for 5 minutes and add the chicken thigh meat to warm through, finish by adding lemon juice. 12. Cut the cooked chicken breast in half lengthways and place in the centre of a serving bowl. 13. Place vegetables and chicken thigh meat in a circle around the chicken breast. 14. Pour chicken broth and garnish with dill leaves and drizzle dill oil around. eat Gnocchi Alla Sorrentina, Chef Lucio, Lucio Pizzeria Ingredients Gnocchi 1kg of starchy potatoes 300g of plain flour 1 egg 250g of mozzarella cheese, torn into small chunks 8 basil leaves Grated Parmesan Sea salt Tomato Sauce 600g of passata 6 tbsp of extra virgin olive oil 2 garlic cloves, peeled and crushed Salt Method 1. Boil the potatoes for about 30 to 40 minutes. Once boiled strain them, peel the skin off the potatoes and squash them through the potato masher. 2. Spread the potatoes on a board and let them cool down. 3. To make the tomato sauce, place the oil and the garlic in a medium saucepan set over a medium heat. Add the passata, cover and allow the sauce to cook for 30 minutes. Once cooked add a few basil leaves, season with salt and keep warm. 4. Make a well in the potatoes and crack the egg into it. Using a fork or your hands to mix the egg with the potatoes and then add a small amount of flour at the time and start to knead until you get a soft pliable texture. 5. Roll out the dough into long cylinders, about the thickness of your thumb. Cut each length into segments, then press each one onto a gnocchi board or fork to give them a ridged texture. Place the gnocchi into a floured tray. 6. Preheat the oven to 200°C. 7. Bring a large pot of heavily salted water to boil. Add the gnocchi and cook until they float on the surface, this should take approximately 2 to 3 minutes. Drain with a slotted spoon and place in the tomato sauce. 8. Stir and transfer to an oven-proof dish. Dress with the mozzarella and basil, dust with grated parmesan and cover with foil. Bake for 10 minutes, until the mozzarella has melted. Remove the foil and finish under the grill for 2 to 3 minutes, until the cheese is golden. Serve immediately. Lucio Pizzeria Darlinghurst, Sydney luciopizzeria.com.au @luciopizzeria

Potato Salad Cream, Pilot Ingredients (serves 4 entree size) 1kg Dutch cream potatoes (we use Ingelara potatoes) 1kg unsalted butter (you won’t need all of this) 500ml reserved potato cooking water 3 fresh crunchy apples (we use Cox's Orange Pippins from Gollion farm) Cold pressed apple juice 1 bunch chives 1/4 bunch celery, cut to 1cm cubes 4 radishes, cut to 1cm cubes Method 1. Peel and spiralise apple and vac seal with cold-pressed apple juice. Do this a few times so the vacuum seal presses the juice into the apples. This helps retain the crunch and keeps them juicy. 2. Boil potatoes with skin on. Once soft, take them out and set aside the liquid for later use. 3. Put them in a 180C (350F) degree oven for 45 minutes to dry out excess moisture. 4. Scoop out the flesh of the potato, making sure to not get any peel of the potatoes, then in batches put them into a blender with 250g butter, 200g reserved potato cooking liquid and blend until desired texture is achieved. The trick is to add the butter and cooking liquid so it doesn't get starchy, but not so much that it's too runny. It is also very important to put everything together whilst it is hot. You want a thin puree consistency similar to double cream. Season to taste. 5. To serve, pour the potato puree on the bottom of a serving dish. Sprinkle with fresh cut chives, celery and radish. Sophie’s Orange and Honey Melt-and-Mix Cake (SERVES 6-8) Ingredients Cake 150g (5 1/2 oz) butter 1 3/4 cups (260g) self-raising flour 1/2 cup (100g) dark brown sugar 2/3 cup (235g) honey 1 tsp ground cinnmamon 1/2 tsp ground ginger 1/4 tsp freshly grated nutmeg 3 eggs 3/4 cup (200g) natural yoghurt 3 blood oranges, peeled and cut into small pieces Icing 1 cup (125g) icing (confectioners’) sugar Grated zest and juice of 1 lemon Method 1. Preheat the oven to 180C (350F). Grease a deep 30 x 20cm (12 x 8 inch) roasting tin and line the tin with baking paper. 2. Melt the butter and set aside to cool for at least 5 minutes. 3. Combine the flour, brown sugar, honey, spices, eggs, yoghurt and cooled butter in a food processor. Whizz for 1 minute or until you have a smooth batter. 4. Pour the batter into the lined tin, smooth the top and dot with the orange pieces. Bake for 45 minutes or until a skewer inserted in the middle of the cake comes out clean. Leave the cake to cool for 10 minutes before lifting it out of the tin and transferring it to a wire rack to cool completely. 5. For the icing, whisk together the icing sugar, lemon zest and juice until thick and smooth. Pour the icing over the cake and serve it in lovely big wedges.

ygge ( pronounce “hoo-ga”) is a Scandinavian word for the mood of coziness and for feeling content, along with wellness and happiness. Hygge feelings can be achieved with good books, candlelight, great company and warm drinks with delicious food and music. If you’ve ever cozied up with a warm drink wrapped yourself in a soft fluffy blanket, then you’ve experienced ‘hygge’ without even realising it. The term itself is old, but it found popularity across the world in 2017 and has been on the rise ever since. There is even a massively popular instagram hashtag #hygge. I have put together these recipes for you to get cosy with. They are delicious and not too difficult to prepare. It is actually a whole days’ worth of cosy food taking you from breakfast through to dinner time. Light some pretty candles, read a good book and share the food in good company all the way through to dessert. All of us want to live well and enjoy the simple things and comforting homemade food is perfect for that. Live a little and bake a sweet pie, get a little ‘hygge’ and appreciate the simple little things that bring you joy.

Cosy Banana and Cinnamon Granola

A cosy day starts with a delicious breakfast, how about a granola that smells like banana bread baking? Crunchy and lightly spiced serve it with warm milk or coconut yoghurt and fresh slices of banana and fruit.

Ingredients 1 cup of rolled oats 1 cup flaked almonds 1 cup walnuts chopped 1/2 cup sunflower seeds 1/2 cup pumpkin seeds 1/2 cup coconut shredded or flakes 2 tablespoons maple syrup or honey 3 tablespoons of flax seed 1 teaspoon cinnamon powder 1 ripe banana peeled 1/4 cup melted coconut oil Method

Put the peeled banana, coconut oil and cinnamon in to a blender and blitz.

2.

Add the dry seeds and nuts to a bowl and pour over the banana mix and stir through well.

3.

Pre-heat oven to 175C. Spread mix on to a lined baking tray and bake in oven for 20 -25 minutes or until deep golden brown.

4.

Remove from oven, cool and serve.

Green Apple, Cheddar and Prosciutto Toasted Sandwiches (Makes 4 Sandwiches)

This sandwich is so simple but perfect for lunch and fancy enough to serve up to a friend. The addition of the crisp sweet green apple slices take this sandwich up an extra level and the gooey rich cheese says cosy comfort food. You could use a brie cheese too, if that’s what you have on hand. Prosciutto can be subbed for bacon but make it crispy first.

Ingredients 8 Slices sourdough bread 1 thinly sliced green apple 3 cups of grated cheddar cheese 8 slices of crisp cooked prosciutto (you can do this on baking paper in hot oven or in a dry frypan on the stove top) Butter, for spreading Sweet chilli jam, to serve Method

Heat up your toaster oven or sandwich press.

Butter slices of bread and top four of them with cheese, crispy prosciutto and thin sliced green apple.

3.

Pop the other slices of bread on top and butter the outside put buttered side down on to the sandwich press and spread the top with some butter cook until toasty brown and cheese is melted.

4.

Serve with a separate dish of sweet chilli jam for dipping.

Pumpkin Red Lentil Chorizo Soup

An easy make ahead wholesome soup with a hint of spice and a touch of sweetness from the roasted capsicum from the chorizo sausage for a cozy night in. To make it vegetarian just omit the sausage. Suitable to freeze leftovers.

Ingredients 2 chorizo sausages, chopped or skins removed and filling squeezed out 500 grams peeled and chopped pumpkin 1 onion peeled and chopped 1 carrot peeled and chopped 2 sticks of celery chopped 2 cloves of garlic these can go in whole or rough sliced 1 roasted red capsicum peeled and deseeded 1 1/2 cups red lentils 7 cups water 1 stock cube (I used chicken but any you have on hand will work) Ingredients Method 3 cups self-raising flour 1. Cook off one of the chorizo sausages chopped in to little pieces and pop in to a bowl for topping the cooked soup before serving. 1 cup thickened cream 2. of Chop veggies roughly (chunky veggies are fine as the soup will be blended). 1 cup lemonade 3.

Using the left-over chorizo oil in your 5-litre pot and add in your veggies, remaining chorizo sausage and garlic and fry off just a little to get some colour on the sausage meat before adding the lentils in, stock cube and 7 cups of water.

4.

Let the soup come to the boil and cook until the lentils and the vegetables are soft. Add in the cooked capsicum and blend with a stick blender until smooth.

5.

Add salt and pepper to taste.

6.

Serve in hot bowls topped with a spoon of sour cream and the reserved crumbled crispy chorizo, you could top with crumbled feta cheese too.

Quick & Easy Cinnamon Scrolls A quick easy scroll version without yeast that are best eaten on the day of baking. Ingredients 2 cups self-raising flour 2 tablespoons castor sugar 3 tablespoons butter 3/4 cup milk 1 egg Filling 1/2 cup brown sugar 1 tablespoon cinnamon 1/4 cup softened butter mix all together Frosting 1/2 cup cream cheese softened 1 cup icing sugar 1/3 cup softened butter 1/2 teaspoon vanilla extract mix together to make smooth frosting Method 1. Preheat oven to 200C degrees. 2. In a bowl rub in butter to flour, sugar adding in milk and egg lightly beaten work in to a dough. 3. Roll out dough on a lightly floured bench forming into a rectangle. 4. Spread with filling mix and roll up into a log slice into scrolls, place scrolls almost touching into a paper lined baking tray brushed with a little melted butter. 5. Bake in your preheated oven for 20 to 25 minutes. 6. Top hot cinnamon rolls with the cream cheese icing mix (drizzle or spread) and enjoy.

Cherry and Strawberry Pie Ingredients Pastry 250g cold grated butter 500g plain flour 50g icing sugar 100ml cold water 3 teaspoons lemon juice Filling 2 1/4 tablespoons corn flour 2 tablespoons lemon juice 600g frozen cherries or fresh when in season (pitted) 300g strawberries (frozen work too) or granny smith apple chopped 160g castor sugar

Method 1.

Mix together the butter and dry ingredients in your food processor adding the lemon juice and water until it forms a ball.

2.

Flatten pastry into a disc and pop into fridge whilst you prepare the pie filling.

3.

Combine cornflour with lemon juice place it along with the fruit into a saucepan. Cook together for approx. 10 minutes. Remove from heat and allow to cool.

4.

Pre-heat oven 180C (350F).

5.

To blink bake your pastry roll out half of the pastry making it nice and even in thickness and so it’s bigger the your pie dish in size.

6.

Drape it over your pie tin and let it hang over the edges. Place a piece of baking paper on top and baking weights or rice to weigh it down.

7.

Bake for approx. 15 minutes. Remove the paper and weights and return to oven for another five minutes.

8.

Fill the pastry case with your cooled filling and roll out your remaining pastry, cutting strips for the lattice top.

9.

Brush the top with a beaten egg and a sprinkle of raw sugar.

10. Bake until golden brown (approx 45 minutes).

Sarah Glover’s Chewy Coconut Choccie Cookies Cooking time: 15mins Prep time: 15mins Ingredients (20 Cookies) 2 eggs 90g sugar 200g coconut desiccated 75g butter melted, cooled to room temp 100g chocolate chopped Good pinch salt Method 1. Set a grill to 190C. 2. Line a baking tray with parchment paper. 3. In a bowl add the eggs and sugar and whisk till mixed, add the coconut flakes, salt, chocolate and butter and mix until fluffy. Let the batter sit for 20 mins, so that the coconut can absorb for a little bit. 4. Spoon dollops of cookie dough onto the tray and shape into a pyramid, place in the grill and cook for 10-15 mins until golden on top, sprinkle with sea salt.

e may not be travelling overseas at the moment but that doesn’t mean we can’t dream in preparation for open borders and the freedom of international travel. tony Creek Farm is a 12 acre smallholding nestled in the rolling hills of the Bega Valley on Australia's pristine Sapphire Coast. Halfway between Sydney and Melbourne and under three hours from Canberra, is the home of North of Eden Gin.This boutique gin distillery & gin school is only 18 months old but already a recipient of 3 international awards. With a tiny team of two (plus their glamorous animal assistants) the magic is performed by Gavin Hughes and Karen Touchie. Gavin is the master distiller, lifter of heavy things, talented chicken wrangler and all-round handyman. Karen is the sorcerer's apprentice, labeller, packer, and Gavin’s number one gin taster. The distillery itself used to be a farm shed. It was converted into a distillery over a period of 12 months, putting in power and water and finally installing "Jill" in October 2018. In mid 2019 the team started work converting another part of the shed into a cellar door and Gin School, which was finished in late December 2019. A visit to North of Eden’s Cellar Door is a must-do if you’re on the Sapphire Coast. When security is in the form of a highland cow and a one legged dog with a neck tie, you know you’re in for an experience. Karen and Gavin are always on hand to offer sage advice about what to drink, and their gin cocktail menu is as extensive as the stunning Bega Valley views that come free of charge. Winter tastings are cosy and laid back with covered outdoor seating, a fire pit, room to languish and generally an audience of over interested cows. North of Eden’s multi award winning micro distillery has been operating commercially since January 2019. They have two signature gins, The Classic and The Connoisseur. In addition to the two signature gins, they recommend the limited edition navy strength gin, The Admiral. Released in June 2020, this deliciously sinful gin is a whopping 57%ABV and won a Silver medal in the 2020 International Wine and Spirits Competition.

Gin School Budding alchemists and adventurous souls who want to get deeper into the groove canlearn how to make their own bottle of gin can do so at North of Eden’s Gin School. Within an intimate classroom setting chock full of chi chi decor, the afternoon of alchemy lasts for 3 hours and includes everything you wanted to know about the magical world of distilling, including complimentary gin, tonic and nibbles, and a bottle of your very own craft gin creation bottled, labelled and ready to take home. Like many other parts of regional NSW, the Bega Valley has been badly impacted by drought as well as the 2020 Black Summer bushfires. Over 70% of the land area of the shire was damaged in the fires, making it one of the worst affected local government areas in Australia. The farm itself had fires on three sides for over six weeks getting to within a couple of kilometres of their boundary on multiple occasions. The impact of the fires on the social, emotional and economic fabric of this small regional area has been profound and will be long lasting. Incredible Places - Tasman Island, Australia Tasman Island is an important breeding site for fairy prions and supports 1% of the species world population. The island is surrounded by steep dramatic dolerite cliffs and is home to the Tasman Island automated Lighthouse and weather station. Samantha Wills A Creative Life Samantha Wills, one of Australia’s great female success stories shares her business and personal journey in her new memoir Of Gold and Dust. We sat down with Samantha to find out more. BY Mia Cowling A huge congratulations on your new book, I read it in one weekend! What made you decide to tell your story now?

would have seen you give up 51% of your company. I imagine that would have been a big decision to make?

SW - In 2016 when I launched the Samantha Wills Foundation I did alot of storytelling and started to tell more real stories atound business. The more ‘raw’ I spoke the more response and connection I got. Fast forward to 2019 and I was offered the book deal, it was signed as a contract for a business memoir but the more I wrote the more I saw the need to parallel the hightlight reel of my life with the lowlights and the human element in-between, and what it takes for an individual and a company of predominantly women to reach the milestones that we did.

SW - Absolutely, in a professional sense meeting my business partner and the people invloved the Samantha Wills brand eclipsed me the individual, without them it would just be me at my dining room table in a huge amount of debt. On a personal front I think so often we don’t recognise the support of a personal network, not just as a refuge but as the people that keep us going in the busiest times. The people that I have mentioned in the book are definitely the key people that have pushed me along on my journey.

SW - I was so singularly focused to get out of debt it felt like I was between a rock and a hard place, but looking back in hindsight I intuitively knew something wasn’t right about giving away 51% of my company even though I was in debt. The universe stepped in and had other plans for me.

Where you nervous about putting so much of your story out in the world? SW - If I wasn’t nevous about it I probably wasn’t telling the depth of what needed to be told but there was an element of trepidation. But I am also at a point in my life when I am incrediblely comfortable about talking about my truth and authenticity. One theme I picked up in the book was that many people featured prominantly in your

SW- Starting a business so young at 21 and all of the milestones you think you are meant to be doing, I wasn’t out doing all of those crazy things. The people that have been there for me from the the start are still with me today. Early on, when your bsuiness was in debt, you didn’t take an investment offer which

You talk about feeling detached from the brand and the Samantha Wils brand being bigger than you at one point. How did that feel for you and do you have any advice to give to other entrepenuers that may find themselves in a similar situation. SW- When I shot the billboard (Samantha Wills for Yellowglen) I was at such a broken point, in that disconnect for me, naming a company after myself gave me a kind of identity crisis in that process. I had to answer who I was without that name. One of the funniest things was when I put the watermark on 2004-2019 to announce the closure of the business and people were googling Samantha Wills obituary and death. Naming the brand after myself afforded me so much on this journey but if I had of called it anything other than Samantha Wills I probably would have sold it and be millions of dollars richer right now. There is no way I could have handed my name over to someone else and seen what they did with it. There is no right or wrong advice, I think if you want to step forward as a public face of your brand you have to be prepared to take the good and bad that comes with that. Your jewellery was worn by very famous celebrities and personalities and you hit many incredible milestones, when those things happened were you able to celebrate the success or were you always looking forward at the future? SW - At the time I knew it was great, but I was definitely thinking about what was next. The trajectory was so sharp around 2008 and 2009 especially with the celebrities, I was always looking at the next thing. You think that once you get to a point that is the pinnacle of success, but when you get there you are thinking about what’s next, in the end that is what can cause burnout. I felt like I should have been more excited. When you were writing in the book about your health and ignoring your bodies’s signs, what was the turning point for you and how would you recognise those warning signs now? SW- I would love to say that I took my own advise and have learnt all of the lessons! My approach now is that I understand the language of my body and intution. I definitely respect and understand my body more and I am taking much quicker action now.

I have alot in storage but I definitely don’t have all of it!. I am currently building out a digital archive for people to enjoy the brand. What’s next for Samantha Wills? SW -The book right now is my baby, I’m happy to follow in her golddust! I would love to perhaps one day see it taken off the pages into a screenplay or production. Storytelling is a deep love of mine, sharing honest conversations, especially about business, is a passion of mine. Do you have more balance in your life now? SW - Balance isn’t a thing to me, I don’t seek balance if I am enjoying something I am doing what fuels me so I won’t seek balance. My barometer now is moments of longer time without anxiety and longer moments of stillness and happiness and having the choice to stay in the moment a little more. You left your operations in Australia and moved to New York to build your business and brand in the US. Did you feel that at that time the expansion into the US was necessary to build the brand? SW - As an individual I think I had to do it to know that I pushed it and tried it regardless of the outcome. I was ready at that point and it was an opportunity to travel and spread my wings. Did you always know that you could write? SW - I still dont know if I can write! When I was approached anout telling my story I enrolled in a writing school in New York and I learnt so much from those courses. The Day I Met DIANA

s a little girl I loved seeing the magazines articles of the Royal family, in particular Princess Diana. Her beauty, grace and glamour felt so otherwordly watching from afar in a small lakeside town in Australia. Every time a newspaper or magazine article was released I would cut it out and save the pictures for future reference. Whether it was the way she had styled her hair, the dress she was wearing or the spectacular jewels that adorned her, I loved seeing her fashion change from event to event. When I was in primary school I got the chance to meet her. The Prince and Princess of Wales were planning their trip to Australia and when their itinerary was announced it was a suprise to see that they would be passing through our small country town of Paynesville in the east of Victoria. The town was excited, school groups were able to take the morning out from school to go to see the Prince and Princess. I remember as a tiny little child being so excited to see this beautiful princess from faraway come to visit. On the day of her arrival, my mum dressed me in my school uniform, made sure my hair was neat and tidy and created a beautiful bouquet of flowers, apricot and pink roses, my favourite at the time and classic 80s gypsophila, a pretty bouquet fit for a princess. The day arrived and we headed down to the foreshire, looking back now at some of the photos it is hard to believe that there were so few people there. Compared to what we know now that her trip to Australia was such a watershed moment for her populairty particularly in this county, to see her so close without the hoards of crowds that were experienced in the capital cities is something that I didn’t fully appreciate at that time. As she stepped off the boat with Charles and made her way her way down the street, she

headed straight towards the children to accept flowers and kind words. Walking the other side of the street was her husband Charles, I remember briefly glancing over at him and thinknig how British he looked but all eyes, mine included, were on Diana. She was wearing a tartan dress with a round lace collar and bow in deep blues and greens, paired with a buckled belt. Her hair was in her classic bobbed flick and I remember looking at her and thinking how porcelain her skin was. It is hard sometimes to reconcile that now with what we do know about that trip and some of the personal challenges and struggles she would go on to highlight in future interviews, but at that point as a little girl looking at the princess walking down that street I could see none of that - all that I saw was beauty and charm. I was lucky enough to be seating right at the front and as she approched I stuck out my hand with the flower bouquet. I could feel mum snapping photos on an old point and shoot camera behind me. Diana lent down and said hello and I had the chance to give her my flowers, she said how beautiful they were and thank you, I don’t recall excatly what I said, I was very young at the time but I do remember hearing her cutglass British accent and thinking how lovely it was. The whole event was over in just a few moments, she then moved on to the next peson and her and Charles continued down the line of the crowd chatting to people as they went. I really hadn’t thought much about meeting her for many, many years afterwards. A number of years later whenI read more about her separation with Charles it made me think back to that day. As a child it was not the type of thing I would have thought about, to me they seemed like a happy young couple. I didn’t see her frailness or that she had lost weight or that there was anything untowards between her and her husband. It is amazing

to me looking back, for all of the events she would have had to endure when internal turmoil was possibly at its height for her, how she managed to make everyone around her feel that they were special and important. I guess that truly is what made her such an icon for many people around the world, her ability to connect while maintaining such a poised exterior experience. I love looking at these photos now, it reminds me of the simplicity of childhood and the intimacy of the visit. Many years later in 2018 I happened to be in Sydney when Meghan Markel and Prince Harry were visiting Australia. I was down near the Opera house in Sydney purely by luck when I saw thousands of people waiting to catch a glimpse of the newlyweds. It struck me just how different that was from the time I got to meet Diana, there were no crowds and minimal security. I am very grateful for that and for the chance to meet soemone so iconic. I had another opportunity when I was in London, to meet Prince Philip at a private event in the early 2000s. The thing that struck me about that introduction was how available he made himself to everyone in the room, he was making jokes, putting people at ease and chatting to everyone who came near him. Like Diana, his apparent outward ease in public was a natural skillset that I imagine when you marry into a family like the Windors makes your job so much more bearable. As the Royal family are so in the public eye it is almost impossible to not have a view, thought and opinion about them. So meeting Diana I feel like she lived up to her image and while it was a childish conversation on my side, I never felt that from her, only her undivided attention and her pure elegance. What a joy to have been able to meet someone who has had such an impact in the last century, if only now I can get an audience with the Queen.

Face Changers On pursuit of flawless skin, we try two much-hyped face treatments and find out if they live up to their reputation. Clear + Brilliant Often described as baby fraxel, or lunchtime laser the Clear + Brilliant laser facial is a minimal downtime laser that promises clearer, glowing skin. The Experience On arriving at the clinic I was greeted warmly and asked to take a seat while I waited for my dermal clinician. I had completed a questionnaire online regarding my skin and health prior to my appointment which saved time upon arrival. The clinic is no nonsense and focused on skin science and data rather than fluffy feel-good treatments, which makes sense given the experience of its staff. I was take into a treatment room and met with Derya Koch, the Director of the Victorian Dermal Group who has over 15 years experience in the industry. Derya and I had a general chat about my skin goals (more clarity, refinement and ‘glow’) and we talked about my skin regime and the products I currently used. After a thorough skin cleanse it was off to the to have a full dermal video. This process was a simple and painless, a series of photographs of my face were taken from all angles. This allowed Derya to apply a series of filters to look at different aspects of my skin condition – hydration, sun damage, wrinkles and oiliness. It was a suprising process, I had much less sun damage than I expected, even though I had always taken good care of my skin and wasn’t a sunbather by virtue of living in Australia under the hot summer sun I expected more damage. I was suprised to learn that I had very mild rosacea or sensitivity, not something I had really

noticed before. After this analysis and confirming that I was a good candidate for Clear + Brilliant we went back to the treatment room to start the treatment. Derya suggested a slightly deeper laser for my skin and set to work. The Treatment I laid down and my skin was cleansed and prepped by Derya. A numbing cream was applied and I was given a cup of herbal tea and my phone and spent the next 20 to 30 minutes pleasantly scrolling through Instagram while waiting for the numbing cream to take affect. Derya returned and it was time for the main event. I was a little apprehensive about the pain level however after the first few passes of the laser it was not really noticeable. Derya gave me a tube of cold air that I could use at any stage to cool down my face but I didn’t need it at all. The laser felt like a bit like a warm scratching feeling scraping across my skin. After about 10 to 15 minutes it was over and Derya popped some protective goggles over my eyes and sat me under a LED light for 10 minutes. Afterwards a light application of cream was applied and I was done. I was given the appropriate post- care information and creams and then I was out of there. The Aftermath Immediately afterwards my skin was red and warm, a little like having sunburn. Luckily I didn’t have anywhere I had to be so it was no problem for me to head straight home. Within a few hours the redness and warmth had subsided. That

evening I didn’t need to do anything special, just head to bed. The next day my skin felt dry and there was a little flaking around my nose and mouth area. The texture was like fine sandpaper, it felt strange but not really noticeable to the naked eye, certainly nothing that would prevent me going to work or out to meet friends. I wore very little makeup, just a touch of mineral foundation base as any powders would have dried the skin out even more. Days 3 and 4 were similar, a scratchy sandpapery feel but by the start of day 6 my skin was super soft – possibly the softest I have felt it in years, and it was really glowy. Over the coming week I really noticed how refined and clear my skin looked and felt, going make-up free was no problem and it has continued to get better and better. You can get great results from just one treatment but a course of 3-4 spaced about 2-4 weeks apart will get you closer to the skin of your dreams. What I loved about this treatment is that there is little to no downtime so it didnt interrupt my life. Would I try it again? A definite yes, it is a little pricey but if you have a good skincare regime and want something to give you that added clarity and glow that goes deeper than a peel I would highly recommend it. I am looking forward to seeing how my skin continues to improve with a few more treatments. Pain level: 2/10 Cost: $$ Effectiveness: A eat.live.escape

Buccal Facial You may have heard of the Buccal Facial in in the lead up to Meghan Markles’ wedding in 2018. It was apparently the bride-to-be’s facial of choice to get her prepped and ready for her big day.

The Experience

I arrived at Beaute The Facial Destination salon and met April Brodie. April is a renowned facialist and skincare expert who has over 37 years experience under her belt. April took me into the treatment room and she explained the treatment to me.

The Treatment

I laid down and my skin was cleansed. A light peel was applied and then April added a facial oil, put on some gloves and commenced the facial massage. The only way I can explain the treatment if you haven’t had it before is to say it felt strange, not uncomfortable or painful, just unusual. April firmly massaged my chin, neck and facial area before the piece de resistance, the inner cheek massage. April used her fingers on the inside and outside of the cheek and mouth area, it was unlike anything I had ever tried before and was a strange sensation but also quite relaxing. Following the massage April applied a face mask and moisturiser and then I was ready to go.

The Aftermath

Immediately afterwards my skin was a little pink and shiny but nothing that would have stopped me from heading out or seeing people. I could see immediate results of the firming ‘lift’ around my chin and jaw line. The next day my skin was beautifully clear and firm and definitely had a glow. This lasted for a week or so and I imagine that regular treatments would keep your skin in beautiful shape and prevent having to head straight for Botox or filler.

Would I try it again?

Definitely, I would ove to add this into my skin facial regime and visit April at least once a month.

looking blush that adds lift to the cheek, keep your blush above the hollow of the cheek bone and about two fingers distance away from your nose. Having colour too close to the nose can sometimes look more like redness than a wash of colour. I always recommend not smiling when putting on blush. Our cheeks drop when we stop smiling, changing the overall position of the blush and making the cheek bone look lower. Keeping your face nice and rested ensures that the placement on the cheek is flattering whatever your facial expression.

Step 2: X’s Once you have worked out placement, it’s time to apply the blush. When applying blush I want you to think of ‘kisses and hugs’ or ‘X’s and ‘O’s’. Starting near the hairline, create an ‘X’ on the cheek which will place the colour down. Why I recommend starting further back is that it is much more flattering having the most colour higher up on the face. This lifts the look, rather than more colour on the lower part of the cheek which can drag the face down. Look straight into a mirror to help guide your placement and use the pupil of your eye as an indicator of when to stop your blush on the cheek.

Circular motions will give you a beautifully diffused finish and it will ensure that you can’t tell where your skin starts and the blush finishes. hat do you think about when you think of a hideaway? Is it a tropical island in the middle of the South Pacific surrounded by palm trees and white sand? Is it high up in the mountains where you can escape from the world and look down on the valleys below? Or is it in the city where you can lose yourself in crowds of people? All of these are escapes, but if you truly want to get away from it all why not try a remote, unspoilt private island. Enter Satellite Island in Tasmania. Lying across Bass Strait from mainland Australia, Tasmania the ‘Apple Isle’, is one of the most dramatic parts of the country with its unspoilt natural features and small population. Off the edge of Tasmania, lies Bruny Island and off the edge of Bruny Island across the D’Entrecasteaux Sea you will find a 34 hectre island paradise unihabited except for you and your guests. When Satellite Island first popped up on our radar a number of years ago we knew it was a place like no other. Images of bedrooms seemingly floating on the sea, sheer cliff faces falling away to clear waters, freshly shucked oysters, abalone and local crayfish, of cosy nights in front of the fire looking out to sea - it is what true hideaway dreams are made of. It feels like a place you can go to that will take you back to simple childhood days of foraging in the bush, playing at the water’s edge and catching fresh seafood to cook over the campfire. Satellite Island is owned by Kate and Will Alstergren, Will inherited the island from his uncle and the couple set about turning it into a private hoilday home and accommodation. Kate engaged the help of Australian interior stylist Tess Newman- Morris to create a rustic coastal vibe. Kate and her family are lucky enought to visit the island for holidays, but when it isn’t being used by the family it is available for guests to book for private vacations. The Summer House perched up on the hill, contains three bedrooms, a living room and bathroom fitted out with cosy coastal interiors. There is a fireplace for those chilly Tasmanian nights (they are often) and a long table to enjoy lunch or dinner with the family. But pehaps one of the most special parts of the island is the Boathouse that sits by the dock of the sea, which contains two bedrooms. You could be forgiven for thinking you are sleeping at sea, however don’t be mistaken, this is no cramped space, it is a beautiful sleeping space flanked by a decked area where you can enjoy early morining yoga, create a fire with loved ones or simply curl up with a good book. Getting to Satellite Island is as simple as having the island keeper, Richard Roe, collect you at nearly Bruny Island. Richard will also be nearby if you need him during your stay, to take you across to Bruny to collect provisions, build a bonfire on top of the island or provide any other assistance and advice. Satellite Island caters for larger groups too, it sleeps 10 comfortably and it makes a great spot to visit with friends and family. It truly is a little slice of the world that is pure escapism. We dare you to visit and spend some time here and not feel like you are cut off for the world, which really is the ultimate luxury these days.

The interiors at Satellite Island are ‘cosy coastal’ in a palette of natural fabrics, creams, whites and blues. It is low-key luxe, with lots of linens, wool, bleached driftwood and natural wood. Sea and fishing touches are evident throughout the interiors and local Tasmanian produce and goods are made available to guests. There are local and antique pieces including a Scandinavian armoire filled with Nordic crystal and an 18th century farmhouse dining table, perfect for family dinners. The interiors embrace the island’s natural beauty, including sandstone shelves carved from the island’s cliffs.

Tell us about Oil in Kind and how it all started.

Our vision for Oil in Kind started with a passion and love for essential oils. We had both previously worked in the industry and it was only until we moved into other jobs that we started exploring and using a variety of different essential oil brands. Because of our previous experience, we had a enough knowledge to identify the quality markers of a pure essential oil. But we realised it wasn’t as easy for the everyday person to do the same and that’s how the idea came to us! There was a clear opportunity to bring all the best brands together in one place, giving people the choice to shop hundreds of credible and trusted essential oil products without having to do hours of research, only to end up more confused than when they began. We couldn’t believe nobody had done it before. So we just knew we had to!

What are the biggest misconceptions about essential oils?

What are the benefits of using essential oils in our beauty and wellness regimes? There are so many benefits of using essential oils. We like to think of them as mother nature’s medicine cabinet, that happen to smell absolutely divine! Each essential oil has its own unique complex chemical make up, which means they have different therapeutic properties and aromas. Because they are extracted from plants, they can be up to 100 times more concentrated than the plant itself. That means essential oils can have a powerful impact on our health and wellbeing but also need to be treated with the same respect and care as traditional medicine. We find that taking a holistic approach and integrating essential oils into your everyday routine to complement other practices is the most effective and safe way to realise their benefits. For example, over the last 6 months in particular, we’ve really seen an increase in people seeking to use essential oils to help with stress and sleep. We always recommend teaming

There is so much incorrect information about essential oils out there! Much of the confusion is created by multi-level marketing companies who have an army of people selling their essential oils based on very little training. That doesn’t mean everything they say is untrue, but ultimately people need to be aware that they are not qualified health care practitioners, they are sales representatives. As the platform that brings all the credible brands together, we see it as our role to cut through that bias and misinformation! One of the most concerning misconceptions we’ve come across is that if an essential oil is natural that means it is safe to use any way and in any quantity. That’s simply not true. Mother Nature is incredibly powerful and essential oils should only be used as directed on the label of a credible brand. This is why safety is a key criteria for products being listed on Oil in Kind. Can you please tell us a bit more about Oil in Kind’s kindness philosophy and its importance in your business? We had both previously worked in corporate jobs and were tired of compromising our own personal values for profit. So as soon as the idea of Oil in Kind was born, we knew that giving back had to be fundamentally embedded into our business model. We believe that doing good should come first and everything around that will naturally follow. What advice would you give to other entrepreneurs who might be interested in starting their own businesses? Be patient! We’re both notoriously impatient people and want to see instant results. Being an ecommerce business and relying on the fast pace of digital marketing really feeds into this even more. As much as we’re proud of the business we’ve created in just over a year, we sometimes forget to celebrate the wins because we’re looking at the next mountain to climb. Entrepreneurship is a long game, and we constantly need to remind ourselves that even those that inspire us the most were a ’10 year overnight success’

Elegance, wealth, prosperity - beautiful peonies have a reputation that precedes them including being difficult to grow. But once you master a few basic tricks, they may just be the most rewarding flowers to bloom in your garden.

Did you know One of the most spectacular winter flowering bushes is the Camellia. Camellia’s can live for 100 to 200 years and the oldest living camellia can be found in China’s Panlong Monastry. It was planted in 1347.

How To Care for Bare -Rooted P lants Planting bare-rooted plants, shrubs and trees in late winter and early spring can be a cost effective option to growing your garden. Bare-rooted plants will typically be cheaper than when they are in bloom. Bare-rooted plants will come in a bag of sawdust or soil to keep the roots from drying out. When planting bare roots, make sure you have your hole dug and prepared before buying your plant so that you are ready to plant when you get them home. You want to avoide exposing the roots of the plant to the air. You should not let them dry out at all. Dig a hole that is large enough to fit the roots without bending or breaking any. Trim off any dead roots before soaking the roots in water for an hour or two (no longer) before planting. Water well after planting and stake your trees and plants for the first year or two, if required.

W I N T E R P lanting Guide The winter garden doesn’t have to be bleak and colourless. With a few well chosen plants, trees and shrubs you can create a magical winter wonderland that will inspire you through the chilly months.

Erlicheer

One of the most fragranced bulbs in the garden, Jonquil Erlicheer are an easy to grow bulb that will reward you year after year. They multiply well and produce a profusion of beautiful creamy blooms. Erlicheer grow well in most climates but in cool climates they really thrive.

Camellias Camellias are the queen of the winter garden. With their beautiful big blooms and glossy green leaves, they should be a feature in the winter garden. Camellias require a well draining, acidic soil. Plant in a spot that will receives some morning sun and afternoon shade.

Tropical HERBS plant oregano, parsley, marjoram, garlic, dill, sagez, rocket. FRUIT & VEGETABLES plant beans, broccoli, cucumber, eggplant, cauliflower, capsicum, kale, lettuce, peas, potato, pumpkin, radish, spinach, sweet corn and tomato. Daphne With their sweetly perfumed

flowers, Daphne plants are a fragrant addition to any winter garden. Plant Daphne in spring in moist, rich and well-draining soil. Be careful with daphne roots, don’t tease them out when you plant them and be careful not to damage them when you are planting. Daphne does best in cool to temperate climates and will not tolerate hot sun.

Holly Looking for a dramatic Snowdrops One of the first bulbs to

burst through the soil and snow in late winter, snowdrops are a sign that spring is on the way. These pretty white flowering bulbs need a cold winter to grow well so are only suited to cooler climates. Plant bulbs grow well in pots and containers but are at their best when they are planted en masse on borders. Snowdrops will be dormant in summer.

ello Sunshine! Nothing was going to stop me from getting on a plane and heading north bound as soon as the borders opened! And of course what better place to escape to than Noosa?

Cheese shop for some local fromage deliciousness. After a wander along the pretty main street, a browse through the shops and lunch at one of the local restaurants, it was time to hit the beach for some serious sunshine.

For decades Noosa, on the south-east coast of Queensland, has been an all-year -round escape for southerners looking for some winter sun with Sydney vibes. This time, however it wasn’t just Noosa I was interested in, but the general Sunny Coast region. I had heard rumours of donuts so perfectly puffed and filled to the brim with chocolate, custard and jam - something that visitors and locals travel far and wide for and an edamame dish so perfectly executed it was motivation enough to leave Noosa’s charms.

Too much sunshine is no good for anyone, or so my grandmother used to say, so after an afternoon nap under a swaying palm tree and a few tropical cocktails it was time to head to Maroochydore for dinner at Rice Boi, the lantern lit wharfside restaurant making sunny coast waves. A yellow curry tofu, seemingly innocent enough, was elevated to the next level with pillows of soft tofu drenched in creamy curry goodenss, accompanied by butter edamame - wow - who new mixing butter and edmame could result in something so more-ish, it could be reason alone to visit Rice Boi. After a food-filled dreamy sleep it was time to seek out the famous donuts I had heard so much about. I headed back to the hinterland to Kenilworth Country Bakery, home to the 1kg donut. These donuts regularly sell out so my tip is to go early and go hungry, prepared to fill up on light doughy donuts filled with dreamy sweet fillings. A sweet tooth’s paradise!

After a few nervous twinges about getting back on a plane, I was off to the Sunshine Coast. Upon landing I was hit with that classic humid warm Queensland air that just screams tropical holiday vibes. First stop, was the pretty hinterland town of Maleny and a wander into the Maleny
